1 medium onion, chopped
1 small green pepper, chopped
2 garlic cloves, minced

CHEESE SAUCE:
1-1/2 pounds American cheese, cubed
1 can (10 ounces) diced tomatoes and green chiles, undrained

Steps:

  • In a Dutch oven, cook beef, onion, chopped green pepper, garlic, salt and pepper over medium heat until beef is no longer pink; drain. Add the water, tomatoes, tomato sauce and cumin. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. , Stir in rice; simmer, uncovered, for 5 minutes. Remove from the heat; cover and let stand for 5 minutes. , Remove tops and seeds from the peppers; cut in half widthwise. Place in a large pan of boiling water; boil for 4 minutes. , Drain peppers and stuff with meat mixture. Place remaining meat mixture in an ungreased 13x9-in. baking dish; top with stuffed peppers, pressing down gently. Cover and bake at 350° for 1 hour. In a saucepan, heat sauce ingredients until cheese is melted. Serve over peppers.

2 red bell peppers
2 yellow bell peppers
3 to 4 tablespoons olive oil, plus more for drizzling
Kosher salt and freshly ground black pepper
2 cloves garlic, sliced
1 jalapeno, thinly sliced into rings
1 small yellow onion, diced
1 small eggplant, peeled and diced
1 cup arborio rice
1 cup dry white wine
One 15-ounce can crushed tomatoes
1/3 cup mascarpone cheese
1 small bunch basil, leaves picked and torn, plus more for serving
8 ounces fresh mozzarella, grated on the large holes of a box grater

Steps:

  • Preheat the oven to 450 degrees F.
  • Cut off the tops of each pepper. Pull out the ribs and seeds and discard. Discard the stems and dice the pepper tops. Set aside. Lightly trim the bottoms of each pepper so they can stand up.
  • Stand the peppers up on a baking sheet or large skillet and drizzle with oil. Season with salt and pepper then roast until they begin to soften, 5 to 8 minutes.
  • Heat the oil in a medium saucepot over medium-high heat. Add the garlic, jalapenos and onions and cook until the onions are translucent, 3 to 5 minutes. Add the diced pepper tops and eggplant and season with salt and pepper. Cook, stirring occasionally, until the vegetables soften and begin to caramelize, about 3 minutes. Stir in the rice and mix to combine. Add the wine and cook until it is reduced by half, 2 to 3 minutes. Add 2 cups water and the crushed tomatoes and cook, covered, stirring occasionally, until the rice is creamy and al dente, 10 to 12 minutes.
  • Remove the saucepot from the heat and stir in the mascarpone and basil. Taste for seasoning, adding additional salt and pepper if needed.
  • Reduce the oven temperature to 400 degrees F. Fill each pepper with the rice mixture, then stand them up on the same baking sheet or large skillet and top with the mozzarella. Bake until the cheese is melted and the peppers are cooked through, about 5 minutes. Serve topped with more torn basil and a drizzle of oil.

DH hates anything green! BUT he caught me watching Food Network (instead of doing housework! lol) and said "WOW- that looks AMAZING! This was the recipe, but of course I have tweeked it a little! They used whole poblanos which would be great. Please feel free to choose whichever you would like poblanos or bell peppers.

1 tablespoon oil
1/2 lb chorizo sausage or 1/2 lb soy chorizo
1 green bell pepper, diced (any color is fine, a mixture is very pretty)
1 large jalapeno, minced, seeds removed if desired
1 medium red onion, diced
2 tablespoons garlic, minced
1 cup rice
1 cup low sodium chicken broth
1/2 cup white wine
1/2 cup water
4 bell peppers, any color or 4 large poblano chiles
1 lb shrimp, peeled, deveined
1 1/2 cups colby-monterey jack cheese, shredded

Steps:

  • In a medium saucepan, heat oil and chorizo, cook for 3 minutes.
  • Add bell pepper, jalapeno, onions and garlic. Cook until they begin to soften then add rice and cook until all the grains of the rice are coated with oil and the rice begins to take on a little color.
  • Add all liquids and stir over high heat for 3 minutes, cover and reduce heat to low.
  • Preheat oven to 400 degrees F.
  • Place poblano chiles on baking sheet and bake for 15 minutes. Remove from oven and let cool. Once cool, cut top 1/4 of chile off and remove ribs and seeds. Do not remove skin as it will help to hold the pepper together.
  • When rice is finished cooking, fluff with fork and stir in shrimp. Stuff chiles with 1/6 of the rice mixture.
  • Place all the chiles on baking sheet and place into oven for 10 minutes.
  • Remove from oven, mix cheeses together and cover pepper with cheese. Broil for 3 minutes to melt and brown the cheese.
  • Serve.

PEPPERS STUFFED WITH RICE, ZUCCHINI AND HERBS



Peppers Stuffed With Rice, Zucchini and Herbs image

I used a medium-grain rice that I buy at my local Iranian market for these peppers. The package says that the rice is great for stuffing vegetables because it doesn't swell too much, and it's right. It goes into the peppers uncooked and steams in the oven, inside the peppers (so it's important to cook them long enough and cover the baking dish). Make sure that you spoon the sauce left in the baking dish over the rice once the peppers are done. These are good hot or at room temperature. I like to use green peppers.

2 medium zucchini (about 3/4 pound), shredded
Salt to taste
1/3 cup extra virgin olive oil
2 garlic cloves, minced
1/2 cup finely chopped fresh mint

1 scant cup uncooked medium grain rice
Freshly ground pepper
2 tablespoons tomato paste dissolved in 2/3 cup water
2 tablespoons freshly squeezed lemon juice

Steps:

  • Prepare the peppers. With a sharp paring knife, cut away the tops, then reach in and pull out the membranes and seeds.
  • Toss the shredded zucchini with salt and let drain in a colander for 20 minutes. Take up handfuls of zucchini and squeeze out as much liquid as possible. Transfer to a medium bowl and add the garlic, mint, parsley or dill, and rice. Season with salt and pepper. Stir in 1/4 cup of the olive oil and let sit for 10 minutes.
  • Meanwhile preheat the oven to 375 degrees. Oil a baking dish large enough to accommodate all of the peppers. Fill the peppers about 3/4 of the way full with the stuffing, and replace the caps. Place in the oiled baking dish. Mix together the tomato paste and water with the remaining olive oil and the lemon juice. Season to taste. Add to the baking dish. Cover the dish with foil. Place in the oven and bake 45 minutes to an hour, until the peppers are soft. Remove from the heat and allow to cool to room temperature, or serve hot. Remove the tops of the peppers and spoon the sauce in the baking dish over the rice before serving.

My fiance loves stuffed peppers but I had never made them. So after looking at quite a few recipes, I decided to put my own special twist on them and see what he thought. He loved them! I used chicken to keep it on the healthy side and used low-fat items whenever possible to try to keep it healthy. I hope everyone else enjoys!

6 medium green peppers
2 cups whole grain rice
1 large boneless skinless chicken breast, cubed
1 pinch seasoning salt
1 pinch garlic powder
1/2 medium onion, diced
2 cups low sodium spaghetti sauce
1/2 cup fat-free parmesan cheese
1/2 cup fat-free shredded mozzarella cheese
1/2 teaspoon garlic powder
2 teaspoons hot sauce, to taste
1/2 cup water
additional fat free mozzarella cheese

Steps:

  • Preheat oven to 400.
  • Cut the tops off of the peppers and scoop out seeds and insides so the pepper is hollow. Stand peppers in a deep baking dish. Set aside.
  • Cook whole grain rice according to package directions (I used Success Boil-in-Bag; it turns out perfect every time in the microwave). Make sure to drain and fluff rice as soon as it's done cooking.
  • While rice is cooking, sprinkle seasoned salt and garlic powder over cubed chicken breast (season to taste). Cook in a large saucepan, adding diced onion halfway through cooking. Cook until chicken is no longer pink and onion is tender.
  • Set burner heat to low and add rice and spaghetti sauce to chicken in saucepan. Stir until well combined.
  • Stir in Parmesan and Mozzarella cheeses to chicken mixture. Stir until well combined and Mozzarella cheese has melted.
  • Add garlic powder and hot sauce (more or less of each to taste -- we like stuff spicy around here!) to chicken mixture and stir to combine.
  • Let the mixture cook on Low heat for about 10 minutes to blend flavors.
  • Remove from heat and divide equally and fill the 6 green peppers with chicken mixture. If it's not enough to fill them to the top, I just mix more spaghetti sauce and extra rice to get them filled.
  • Add 1/2 c water to the bottom of the deep baking dish to help peppers cook. Bake in oven 45 minutes or until pepper cups are mostly tender with just a little crunch.
  • Serve with additional shredded Mozzarella to sprinkle over the tops of peppers.

1 12oz package Queso fresco (Casique brand or similar)
1 lb flat iron steak (sirloin or similar will work as well)
1 bunch cilantro (about 1 cup)
2 cups basmati rice
1 10oz can Ro*Tel Tomatoes
12 oz Light Sour Cream
1 lime
1 TSP butter
1 tsp cumin powder
1 tsp chili powder

Steps:

  • The Meat: Season Flat iron Steak with Salt and Pepper. Grill for 8 minutes per side or until medium rare. Set aside to rest. Cut into 1" cubes The Peppers: Roast poblano peppers under broiler turning ¼ turn every 3 minutes until skin is charred and bubbly. Place peppers into sealed plastic bag to cool. Peel peppers and remove seeds. Don't be too concerned about creating a pouch; the pepper will eventually loosely surround the filling Cilantro: Dice cilantro and put aside The Rice: In a 4-quart pan, sauté rice with butter for 2-3 minutes. Add Ro-Tel tomatoes and 2 ½ cups of water. Bring to a boil and let simmer for 20 minutes. Once rice is cooked, add half of the cilantro and stir with a fork to incorporate. The Sauce: In a saucepan, add sour cream, the zest of 1 lime and the juice of ½ lime, cumin and chili powder. 1 can (15 oz) Progresso™ black beans, drained, rinsed
3/4 cup cooked white rice
4 medium green onions, sliced (1/4 cup)
1/4 cup chopped fresh cilantro
2 tablespoons vegetable oil
2 tablespoons lime juice
1 clove garlic, finely chopped
1/4 teaspoon salt
3 large bell peppers, cut lengthwise in half, seeds removed
1 plum (Roma) tomato, diced
Additional chopped fresh cilantro, if desired

Steps:

  • Heat coals or gas grill for direct heat. Cut three 18x12-inch pieces heavy-duty foil. Spray with cooking spray.
  • Mix beans, rice, onions, 1/4 cup cilantro, the oil, lime juice, garlic and salt. Place 2 bell pepper halves on one side of each foil piece. Fill with bean mixture.
  • Fold foil over peppers so edges meet. Seal edges, making tight 1/2-inch fold; fold again. Allow space on sides for circulation and expansion.
  • Cover and grill packets over medium heat 15 to 20 minutes or until peppers are tender. Place packets on serving platter. Cut large X across top of each packet; fold back foil. Sprinkle with tomato and additional cilantro.

1 cup uncooked brown rice
2 cups water
2 tablespoons olive oil
1 clove garlic, minced
1 (12 ounce) package extra-firm tofu, drained and diced
1 ¾ cups marinara sauce, divided
salt to taste
ground black pepper to taste
2 red bell peppers, halved and seeded
2 orange bell peppers, halved and seeded
2 cups shredded mozzarella cheese
8 slices tomato

Steps:

  • Place rice and water in a pot and bring to a boil. Cover, reduce heat to low, and simmer 45 minutes, or until tender.
  • Heat the olive oil in a skillet over medium heat, and stir in garlic and tofu. Cook about 5 minutes. Mix in 1/4 cup marinara sauce, season with salt and pepper, and continue to cook and stir until tofu is evenly brown.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Using a wooden spoon or spatula, press an equal amount of rice into each pepper half. Layer rice with remaining marinara sauce, and 1/2 the cheese. Press equal amounts of tofu into the pepper halves. Place 1 tomato slice on each pepper, and top peppers with remaining mozzarella. Arrange stuffed peppers in a baking dish.
  • Bake 25 minutes in the preheated oven, until cheese is melted. Serve 1/2 of each color pepper to each person.

3 lb ground beef
6 large bell peppers-red, yellow, orange or green
salt and pepper to taste
1 tsp minced garlic
1 tsp dried cilantro
2 box rice a roni spanish rice *see note*
1 Tbsp butter
1 can(s) mexican tomatoes
5 c water *see note*

Steps:

  • 1. Pre Heat oven to 350 F.
  • 2. Salt and pepper ground beef, brown in a skillet. Add cilantro and minced garlic - cook grease off. Set aside. Cook Spanish Rice according to instructions, add mexican tomatoes, juice also.( If you want it spicy-use Rotel tomatoes) Add cooked hamburger to the rice mixture, mix well.
  • 3. While the ground beef and rice are cooking, cut tops off of your bell peppers, scoop out the seeds, rinse. Add beef/spanish rice mixture to the bell peppers, stuff full. Put stuffed peppers in a 9 x 13 glass pan; add a little water to the bottom of the pan. Cover with foil, cook for about 45-60 mins.
  • 4. *NOTE*: Use only 1 Tbsp of butter in the Spanish Rice to cut out fat; use only 4 Cups or less of water if you add the juice of the Mexican tomatoes.

1 (10 ounce) can Rotel tomatoes & chilies
1/2 red onion, chopped
3 scallions, chopped
1 tablespoon cumin

Steps:

  • Fry rice in a little olive oil until it is lightly browned. (3-5 minutes).
  • add rotel (and juice), garlic, onion, cumn.
  • fry one more minute and pour into sauce pan with the water and beans.
  • boil for 15 minutes or until tender.
  • in the mean time, slice poblano peppers in half and remove seeds.
  • Broil peppers for 3-5 minutes to begin roasting.
  • Pile rice mix on top of poblano peppers and sprinkle with cheese.
  • bake for 15-20 minutes, until cheese is lightly browned.

6 medium bell peppers
1 (10 ounce) package frozen riced cauliflower
1 teaspoon olive oil
1 pound 93% lean ground beef
1 (8 ounce) package cremini mushrooms, diced
2 medium carrots, diced
2 stalks celery, diced
½ medium yellow onion, diced
1 tablespoon Italian seasoning
1 teaspoon red pepper flakes
1 teaspoon dried oregano
½ teaspoon salt
½ teaspoon ground black pepper
3 cloves garlic, minced
1 (14.5 ounce) can diced tomatoes, drained
1 (6 ounce) can tomato paste
5 leaves fresh basil, chopped

Steps:

  • Slice tops off peppers and place peppers on a microwave-safe plate. Remove stems from pepper tops and discard. Dice flesh from pepper tops and set aside 1/2 of the diced peppers; save remaining diced peppers for another use.
  • Microwave peppers on high for 3 minutes until partially cooked.
  • Place frozen riced cauliflower in a microwave-safe bowl and microwave on high for 4 minutes, stirring halfway through.
  • Heat olive oil in a large nonstick skillet over medium-high heat until hot, about 1 minute. Add beef, mushrooms, carrots, celery, onion, and reserved diced peppers and cook until onions begin to turn translucent and beef is nearly cooked, about 5 minutes. Stir in Italian seasoning, red pepper flakes, oregano, salt, and pepper; cook for 1 minute. Add cooked riced cauliflower and garlic; stir and cook until beef is browned and crumbly, breaking up any chunks with a spoon, 2 to 3 more minutes.
  • Preheat the oven to 350 degrees F (175 degrees C).

1 lb shrimp
6 bell peppers (any color)
1 tablespoon olive oil
1/2 cup tomato sauce
1 cup parmesan cheese
1/4 cup breadcrumbs
1/2 cup brown rice
1/2 cup white rice
1 tablespoon cayenne pepper
1 tablespoon salt
1 teaspoon ground black pepper
1 teaspoon chili powder
1 teaspoon paprika
1 teaspoon white pepper
spices, can be altered to individual taste

Steps:

  • Preheat oven to 375 degrees.
  • Cut tops off peppers and remove the seeds and ribs.
  • Cook brown and white rices. Set aside. While rice is cooking, drizzle olive oil in a pan and sautee shrimp over medium heat.
  • When shrimp are pink, remove shrimp from the pan. Cut shrimp into bite-sized pieces.
  • Combine rices and the spices in pan and let simmer. Add shrimp to pan. Also add tomato sauce. Cook over medium heat.
  • Add bread crumbs and 1/2 the parmesan cheese.
  • Stuff peppers graciously and top with the remaining parmesan cheese.
  • Cook in casserole dish for 15-20 minutes, until the parmesan cheese is melted and bubbling.

6 bell peppers
2 ½ cups chunky tomato sauce
½ onion, very thinly sliced
1 cup beef broth
¼ teaspoon red pepper flakes
1 ½ pounds lean ground beef
1 ½ cups cooked rice
½ cup freshly shredded Parmigiano-Reggiano cheese
¼ cup chopped fresh flat-leaf parsley
½ cup chunky tomato sauce, divided
4 cloves garlic, minced
2 teaspoons salt
½ teaspoon freshly ground black pepper
1 tablespoon chopped fresh flat-leaf parsley, divided

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Slice the top 1/2 inch from the tops of peppers and cut out the stems from the tops. Cut the core from the inside of the peppers and strip away any seeds. Cut away a very thin slice of pepper from the bottoms so the peppers can stand upright. Poke about 4 tiny holes in the bottoms to let juices drain out.
  • Pour 2 1/2 cups tomato sauce into a 9x13-inch baking dish. Add onion, beef broth, and red pepper flakes; spread out mixture evenly over the bottom. Set prepared bell peppers upright in the dish.
  • Combine ground beef, cooked rice, Parmigiano-Reggiano cheese, 1/4 cup parsley, 2 tablespoons tomato sauce, garlic, salt, and black pepper in a large mixing bowl.
  • Lightly stuff peppers with meat mixture. Spread 1 tablespoon remaining tomato sauce on top of each portion of stuffing; place reserved tops onto peppers. Lay a piece of parchment paper loosely on top of peppers and cover dish tightly with foil. Lay dish on a baking sheet.
  • Bake in preheated oven for 1 hour. Peppers should be starting to soften. Remove foil and parchment paper. Continue to bake until meat filling is cooked through and the peppers are tender, 20 to 30 more minutes. Sprinkle each pepper with 1/2 teaspoon parsley and drizzle with a spoonful of pan juices.

One 6 oz. package Farmhouse® Spanish Rice
One 14 oz. can diced tomatoes, undrained
1-1/2 cups water
6 green, red, yellow or orange bell peppers (choose bell peppers with straight sides and that will stand upright)
2 Tablespoons butter or margarine
1/2 cup onion, chopped
1/2 cup celery, chopped
2 cloves garlic, chopped
1 lb. lean ground beef
1 cup grated cheddar cheese

Steps:

  • Preheat oven to 350°. In medium sauce pan over medium heat, bring water, tomatoes, rice and contents of seasoning packet just to boil. Reduce to low boil, cover, and cook for 25 minutes. Uncover and remove from heat. Prepare peppers by cutting off tops. Set pepper tops aside. Scrape out insides of peppers to remove seeds and membrane. Discard scrapings. Place peppers in baking pan. Remove stems from reserved pepper tops and chop pepper tops into small pieces. While rice is cooking, in medium skillet over medium heat, add butter, onion, celery, garlic and chopped pepper tops. Cook until soft, about 5 minutes, stirring frequently. Add ground beef and cook until meat is no longer pink. Remove from heat and drain excess grease. Add rice into meat mixture and stir until combined. Fill peppers with mixture. Place stuffed peppers in oven and bake for 30 minutes. Remove from oven and sprinkle cheese on top of peppers. Return to oven and bake an additional 3 minutes until cheese melts. Remove from oven and serve.
