1 1/2 ounces pine nuts, about 1/3 cup
2 tablespoons butter
1/4 cup finely chopped onion
1/2 teaspoon finely minced garlic
1 cup converted (not instant) rice
1 1/2 cups water

Steps:

  • Place pine nuts in skillet and cook, stirring often, until lightly browned. Remove from heat.
  • Heat half the butter in saucepan and add onion and garlic. Cook, stirring, until onion is wilted. Add rice and stir. Add pine nuts and water and bring to boil. Cover closely and let simmer exactly 17 minutes.

2 tablespoons butter
4 tablespoons chopped onions
1/4 cup pine nuts
1 cup converted rice
1 1/2 cups water
2 sprigs fresh thyme or 1/2 teaspoon dried
1 bay leaf
Salt and freshly ground pepper to taste

Steps:

  • Preheat the oven to 400 degrees.
  • Melt 1 tablespoon of the butter in a heavy saucepan and add the onions and pine nuts. Cook, stirring, until wilted. Add the rice, water, thyme, bay leaf and salt and pepper.
