Rigatoni al Segreto (Rigatoni with Secret Sauce) image

This Rigatoni al Segreto recipe was the most closely guarded secret at Gino's, one of New York City's most famous Italian restaurants. When it closed, the recipe got out. But I think the amount of butter was way too low. So here's my version.

Tips:

  • Use high-quality ingredients: Fresh, flavorful ingredients will make a big difference in the final dish. Look for ripe tomatoes, sweet bell peppers, and succulent shrimp.
  • Don't overcrowd the pan: When cooking the shrimp, make sure to give them enough space so they can cook evenly. If you overcrowd the pan, the shrimp will steam instead of sear.
  • Cook the shrimp until they are just opaque: Overcooked shrimp are tough and chewy. Cook them just until they turn from translucent to opaque, about 2-3 minutes per side.
  • Use a good quality white wine: The white wine in the sauce should be something you would enjoy drinking on its own. A dry, crisp white wine, such as a Sauvignon Blanc or Pinot Grigio, will work well.
  • Add the cream at the end: Adding the cream at the end of the cooking process will help to prevent it from curdling.
  • Serve immediately: This dish is best served immediately, while the shrimp are still hot and the sauce is creamy.

Conclusion:

Rigatoni Portofino is a delicious and easy-to-make dish that is perfect for a weeknight meal. With its combination of shrimp, tomatoes, bell peppers, and a creamy white wine sauce, this dish is sure to please everyone at the table.
