Rigatoni With Spicy Sausage-Tomato Sauce, Arugula and Parmesan image

This is from Bon Appetit magazine, June 2008. This is exactly as written in the magazine, but when I made it I used spinach instead of arugula (the market was out of arugula and my husband doesn't like it anyway). We LOVED the fresh complex flavor of this dish!

Rigatoni al Segreto (Rigatoni with Secret Sauce) image

This Rigatoni al Segreto recipe was the most closely guarded secret at Gino's, one of New York City's most famous Italian restaurants. When it closed, the recipe got out. But I think the amount of butter was way too low. So here's my version.

RIGATONI WITH TOMATOES AND MOZZARELLA

Rigatoni with Tomatoes and Mozzarella image

Tomatoes are at their peak in the summer -- toss them with mozzarella cheese, vinegar, olive oil, and parsley for a quick pasta sauce.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Pasta and Grains

Time 20m

Number Of Ingredients 10

Coarse salt
3/4 pound rigatoni, or other short tubular pasta
2 pounds plum tomatoes, coarsely chopped
1 tablespoon balsamic vinegar
3 tablespoons olive oil
3 garlic cloves, thinly sliced
1/4 teaspoon red-pepper flakes
1/2 cup chopped fresh parsley
1 tablespoon chopped fresh oregano, or 1/2 teaspoon dried
8 ounces fresh mozzarella cheese, diced

Steps:

  • In a large pot of boiling salted water, cook pasta until al dente, according to package instructions; drain.
  • Meanwhile, in a large bowl, combine tomatoes, vinegar, and 1/2 teaspoon salt; set aside.
  • In a small skillet, heat oil over low heat. Add garlic; cook, stirring often, until tender and just beginning to take on color, about 4 minutes. Remove from heat, and stir in red-pepper flakes.
  • Stir garlic mixture into reserved tomato mixture. Add parsley, oregano, mozzarella, and pasta; toss.

Tips:

  • Use ripe tomatoes for the sauce. This will give it a sweeter, more flavorful taste.
  • Don't be afraid to add a little spice to the sauce. A pinch of red pepper flakes or a dash of cayenne pepper can really add some depth of flavor.
  • Use a good quality cheese. The cheese is one of the main ingredients in this dish, so it's important to use a cheese that you enjoy the taste of.
  • Cook the pasta al dente. This means that the pasta should be cooked until it is just tender, but still has a slight bite to it.
  • Don't overcrowd the pan when cooking the pasta. This will prevent the pasta from cooking evenly.
  • Serve the pasta immediately after it is cooked. This will ensure that the pasta is at its best.
  • Garnish the pasta with fresh basil or parsley. This will add a pop of color and freshness to the dish.

Conclusion:

Rigatoni with spicy tomato and cheese sauce is a delicious and easy-to-make dish that is perfect for a weeknight meal. The combination of the spicy tomato sauce, the melted cheese, and the tender pasta is sure to please everyone at the table. This dish is also very versatile, so you can easily customize it to your own taste. For example, you could add some cooked chicken or sausage to the sauce, or you could use a different type of cheese, such as Parmesan or mozzarella. No matter how you make it, rigatoni with spicy tomato and cheese sauce is sure to be a hit.
