2 large egg whites, at room temperature
1 pinch salt
1 cup white sugar
1 ½ cups pecan halves
1 ½ cups whole almonds
4 teaspoons ground cinnamon
⅓ cup unsalted butter, melted

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).

2 egg whites, room temperature
1 pinch salt
1 cup sugar or 1 cup Splenda sugar substitute
3 cups whole almonds (not salted ones) or 3 cups pecans (not salted ones)
4 teaspoons cinnamon

Steps:

  • Preheat oven to 325 degrees.
  • Place butter on a 15 1/2 x 10 1/2-inch jellyroll pan; place in oven to melt butter, about 7 minutes. Meanwhile, beat egg whites with salt until frothy; gradually add sugar, beating to stiff peaks.

1/4 cup packed light-brown sugar
2 tablespoons fresh lemon juice
4 Gala or Fuji apples
4 cinnamon sticks, plus more for garnish (optional)
2 pints vanilla ice cream

Steps:

  • Preheat oven to 450 degrees. Spread pecans in a 13-by-9-inch baking dish; toast until fragrant, 3 to 5 minutes. Remove pecans, and set aside (or store in a resealable plastic bag, up to 1 day).
  • In a large bowl, combine sugar, lemon juice, and 1/4 cup water. One at a time (to prevent them from turning brown), halve apples through the stem end, core, using a melon baller, and immediately toss with sugar mixture.
  • Arrange apples, cut side down, in baking dish; pour sugar mixture over. Tuck in cinnamon sticks; cover dish with foil. Bake until apples are easily pierced with the tip of a paring knife, 15 to 20 minutes.

1/2 c brown sugar
1 Tbsp vanilla extract
1 1/2 tsp ground cinnamon
pinch salt

Steps:

  • 1. Preheat oven to 225F. In a small bowl, mix together the sugar, cinnamon, and salt then set aside. In a medium-sized mixing bowl, whisk together the egg white and vanilla until foamy (about 2 minutes). Add the pecans and mix until they are coated evenly in batches, add the sugar mixture and evenly coat the pecans. Transfer to a parchment paper lined sheet in a single layer. Bake for 1 hour, stirring every 15 minutes and redistributing into a single layer.
