ROASTED PEARS WITH CARAMEL SAUCE
This golden, glossy delight could not be easier to make. All major varieties of pears - Bartlett, Bosc, red, Anjou - work equally well. However, Bosc roasts up slightly firmer than the others.

Steps:
- Preheat the oven to 350 degrees. Halve and peel the pears, and carefully remove the seeds and core.
- Melt the butter in a large cast-iron skillet over medium heat. Arrange the pears, cut side down, in the skillet so they just touch one another. Sprinkle the sugar, over the pears and butter. Cook, tilting the pan back and forth gently from time to time, until the sugar dissolves and melts into a golden caramel, about 4 minutes. Scrape the vanilla seeds into the pan, and add the pod. Reduce the heat, add the brandy, and cook a few minutes more. Be aware that the brandy may ignite, but the flames will die down quickly.
- Carefully turn the pears over, and transfer to the oven. They should be deep golden brown. Roast until the pears are fork tender, about 10 minutes, depending on the ripeness and size of the pears. Serve with thick slices of pecorino and caramel sauce.
Tips:
- Choose ripe pears: For the best flavor, use ripe, juicy pears. Bosc, Bartlett, and Anjou pears are all good choices.
- Roast the pears: Roasting the pears brings out their natural sweetness and flavor. You can roast them in a single layer on a baking sheet or in a baking dish.
- Make the simple syrup: Simple syrup is a mixture of sugar and water that is heated until the sugar dissolves. It is used to sweeten the bellinis and add a touch of pear flavor.
- Chill the ingredients: Before making the bellinis, chill the prosecco, simple syrup, and roasted pears. This will help to create a refreshing drink.
- Garnish with a pear slice: When serving the bellinis, garnish each glass with a slice of roasted pear. This will add a touch of elegance and flavor.
Conclusion:
Roasted pear bellinis are a delicious and refreshing cocktail that is perfect for any occasion. They are easy to make and can be tailored to your own taste. Whether you like them sweet or tart, these bellinis are sure to please. So next time you are looking for a special drink to enjoy, give roasted pear bellinis a try. You won't be disappointed!
