HEIRLOOM TOMATO AND FETA SALAD

Heirloom Tomato and Feta Salad image

This is a fresh, flavorful salad with heirloom tomatoes. Even my non tomato-eating husband likes this recipe. We went out to dinner for tapas one night and they had a similar salad. I came home and recreated it with my own twist. We loved it, I hope you do too. I'm sure this will work with regular tomatoes too.

Provided by Joanna DaCosta

Time 20m

Yield 4

Number Of Ingredients 13

3 medium heirloom tomatoes, sliced
1 (4 ounce) package feta cheese, or to taste
6 grape, seedlesses seedless red grapes, cut in half
¼ cup freshly squeezed orange juice
1 ½ tablespoons honey
1 clove garlic, minced
¼ teaspoon salt
¼ teaspoon dried basil
1 wedge lime
1 (1 inch) piece fresh ginger
1 teaspoon white vinegar, or as needed
1 slice yellow onion
¼ cup canola oil

Steps:

  • Blot tomato slices on a paper towel and place on a serving dish. Cut feta block into slices and place a slice on each tomato. Sprinkle with grapes.

Tomatoes and Feta Cheese with Herb-and-Garlic Dressing image

Provided by Susan Springob

Categories     Salad     Cheese     Olive     Tomato     No-Cook     Vegetarian     Quick & Easy     Summer     Bon Appétit     South Carolina

Yield Serves 4

Number Of Ingredients 10

6 tablespoons tarragon vinegar
2 tablespoons chopped fresh oregano or 2 teaspoons dried
1 tablespoon coarse-grained Dijon mustard
1 shallot, minced
1 large garlic clove, minced
1 teaspoon minced peeled fresh ginger
1 cup olive oil
4 large tomatoes, thinly sliced
1/3 cup Kalamata olives or other brine-cured black olives, pitted, chopped
1/3 cup crumbled feta cheese

Steps:

  • Combine first 6 ingredients in medium bowl; gradually whisk in oil. Season dressing to taste with salt and pepper.
  • Arrange tomatoes on platter. Sprinkle with olives and cheese. Drizzle with enough dressing to coat. Serve, passing remaining dressing separately.

Tips:

  • Choose ripe Roma tomatoes, as they have the best flavor. Look for tomatoes that are firm and have a deep red color.
  • It is important to cut the tomatoes into small pieces about 1 inch, so that they are easy to toss with the dressing and absorb the flavors.
  • Use a good quality feta cheese, as it will make a big difference in the flavor of the salad. Look for feta that is creamy and has a slightly salty taste.
  • Do not add the dressing to the salad until just before serving, as this will prevent the tomatoes from becoming watery.
  • Garnish the salad with fresh herbs, such as basil, oregano, or thyme, for extra flavor and color.

Conclusion:

This Roma tomato salad with feta and garlic is a delicious and refreshing salad that is perfect for a summer meal. It is easy to make and can be tailored to your own personal taste. Whether you like your salad mild or spicy, there is a way to make this salad perfect for you. So next time you are looking for a healthy and satisfying salad, give this Roma tomato salad a try.
