RUDY'S CREAMED CORN

Rudy's Creamed Corn image

I'm posting this here for safe keeping as I have already misplaced this recipe at least 4 times. This is supposed to taste just like the creamed corn served at a popular BBQ restaurant in San Antonio, Texas called Rudy's. Since I've never eaten at Rudy's I cannot say for certain whether it does or doesn't taste like theirs. The directions that were provided were not very detailed.

RUDY'S CREAMED CORN RECIPE - (3.8/5)

Rudy's Creamed Corn Recipe - (3.8/5) image

Provided by dkanon

Number Of Ingredients 7

4 pounds frozen sweet corn
2 (8-ounce) blocks cream cheese, diced into 1 inch squares
1 (4-ounce) stick of salted butter
3/4 cup heavy whipping cream
4 tablespoons of sugar
1 teaspoon black pepper
1/2 teaspoon salt

Steps:

  • Throw all the ingredients into a crockpot on medium or low for at least 4 hours. If you need it done faster, cook it on the stove or on high in the crockpot, but be prepared to sacrifice a little of the savory goodness that results when corn is allowed to soak in dairy for hours. All of the cream cheese pieces should be completely melted and will easily break down and combine with the cream and butter to make the 'gravy'. Do not over-salt. There is plenty of salt in the butter and cream cheese. Over-salting will ruin this dish.

Number Of Ingredients 7

4 pounds frozen sweet corn
2 8oz blocks cream cheese, diced into 1 inch squares
1 stick (40z) of salted butter
¾ cup heavy whipping cream
4 tablespoons of sugar
1 teaspoon black pepper
½ teaspoon salt

Steps:

  • Throw all the ingredients, without any sort of ceremony or circumstance, into a crockpot on medium or low for at least 4 hours. If you need it done faster, cook it on the stove or on high in the crockpot, but be prepared to sacrifice a little of the savory goodness that results when corn is allowed to soak in dairy for hours. There is plenty of salt in the butter and cream cheese. Over salting will ruin this dish. If you want a lighter version of this, please follow the recipe on recipezaar that this recipe adapted from.

Tips:

  • Use fresh corn kernels for the best flavor. If using frozen corn, thaw it completely before using.
  • To make a creamier sauce, use heavy cream instead of milk. You can also add a tablespoon of butter or margarine for extra richness.
  • If you don't have cream corn on hand, you can make your own by pureeing some of the cooked corn kernels in a blender or food processor.
  • Add some chopped fresh herbs, such as cilantro, parsley, or chives, for extra flavor.
  • Season the creamed corn to taste with salt, pepper, and cayenne pepper.
  • Serve creamed corn as a side dish with fried chicken, grilled fish, or pork chops.
  • You can also use creamed corn as a topping for tacos, burritos, or nachos.

Conclusion:

Rudy's creamed corn is a delicious and versatile side dish that can be enjoyed with a variety of meals. It's easy to make and can be tailored to your own taste preferences. So next time you're looking for a creamy, comforting side dish, give Rudy's creamed corn a try. You won't be disappointed!
