A tasty twist on a traditional treat. A friend passed on the recipe she had found online. I tweaked it to fit what I had in the pantry. The original recipe called for chopped Heath bars instead of the toffee bits and mini chocolate chips.

Tips:

  • Mise en place: Before you start, ensure all your ingredients and tools are ready. This will streamline the cooking process and prevent scrambling during the toffee-making.
  • Use a heavy-bottomed saucepan: This will evenly distribute heat and prevent the sugar from burning.
  • Use a candy thermometer: This is essential for accurately measuring the temperature of the sugar syrup. The right temperature is crucial for achieving the desired consistency of the toffee.
  • Stir constantly: This will prevent the sugar from crystallizing and help create a smooth, creamy toffee.
  • Don't overcook the toffee: Once the toffee reaches the desired temperature, remove it from heat immediately to prevent it from becoming too hard and brittle.
  • Work quickly: Toffee starts to set quickly, so you need to work quickly to spread it out and cut it into pieces before it hardens.
  • Store the toffee properly: Toffee can be stored in an airtight container at room temperature for up to 2 weeks or in the refrigerator for up to 4 weeks.

Conclusion:

Making Russian toffee at home is a rewarding experience that yields delicious and versatile candy. With careful attention to temperature and constant stirring, you can create perfect toffee with a smooth, creamy texture and a rich, buttery flavor. Whether you enjoy it plain, coated in chocolate, or used as an ingredient in other desserts, Russian toffee is a treat that is sure to satisfy your sweet tooth.
