1 ½ pounds beef cube steak
3 tablespoons all-purpose flour
1 tablespoon olive oil
½ tablespoon butter
1 onion, chopped
1 clove garlic, minced
1 cube beef bouillon, dissolved in 1 cup water
1 (15 ounce) can sliced potatoes, drained
1 (8 ounce) can peas and carrots
1 teaspoon browning sauce
½ teaspoon Italian seasoning
1 teaspoon salt
1 teaspoon ground black pepper

Steps:

  • Cut cube steaks into pieces about 1/2 inch in size. Sprinkle flour over a plate, and dredge meat in flour.
  • In a large skillet, heat oil and butter over medium high heat. Add steak pieces, onion, and garlic to oil in pan; saute till lightly browned. Add more butter if needed.
  • Stir in beef bouillon, potatoes, peas and carrots, browning sauce, Italian seasoning, salt, and black pepper. Cover, turn heat down to simmer, and cook for 25 minutes. It will thicken as it cooks. Add more water if it gets too thick.

3 tablespoons all-purpose flour
½ teaspoon salt
¼ teaspoon ground black pepper
2 eggs
2 tablespoons water
⅓ cup crushed saltine crackers
⅓ cup grated Parmesan cheese
½ teaspoon dried basil
3 tablespoons vegetable oil
4 (4 ounce) beef cube steaks
1 ¼ cups canned tomato sauce
2 ¼ teaspoons white sugar
½ teaspoon dried oregano, divided
¼ teaspoon garlic powder
4 slices mozzarella cheese
⅓ cup grated Parmesan cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). In a shallow dish, stir together the flour, salt and pepper. In a separate bowl, whisk together the eggs and water with a fork. In a third bowl, or shallow dish, mix together the cracker crumbs, 1/3 cup of Parmesan cheese and basil.
  • Heat the oil in a large skillet over medium heat. Dredge the cube steaks in the seasoned flour, dip into the egg mixture, and coat with the cracker crumb mixture. Place them in the skillet, and fry just until browned on each side. Arrange steaks in a single layer in a greased casserole dish.
  • Bake for 25 minutes in the preheated oven. Meanwhile, in a medium bowl, stir together the tomato sauce, sugar, 1/4 teaspoon of oregano, and garlic powder. Spoon over steaks when the 25 minutes are up. Top each steak with mozzarella cheese and remaining Parmesan cheese; sprinkle remaining oregano over the top. Bake for 5 more minutes, or until the cheese is melted, and the sauce is hot.

2 pounds beef stew meat
4 medium carrots, cut into 1-inch pieces
1 large onion, chopped
4 garlic cloves, minced
1 can (14-1/2 ounces) diced tomatoes, drained
1 can (12 ounces) tomato paste
3/4 teaspoon salt
1/2 teaspoon pepper
2 cartons (32 ounces each) chicken broth
2 tablespoons minced fresh parsley, optional
2 pounds potatoes (about 4 medium), peeled and cubed
1 can (15 ounces) cannellini beans, rinsed and drained
1/4 cup grated Parmesan cheese
1-1/2 cups uncooked ditalini or other small pasta
2 cups chopped fresh spinach

  • In a 7-qt. Dutch oven, heat 1 tablespoon oil over medium-high heat; brown half the beef. Remove from pan. 2 beef cube steaks (6 ounces each)
1 to 2 tablespoons canola oil

7 to 8 tablespoons sour cream

  • In a large resealable plastic bag, combine the flour and salt. Add cube steaks, one at a time. Seal bag and shake to coat. , In a large skillet, cook the steaks in oil over medium heat for 4-5 minutes on each side or until browned and tender. Remove and keep warm., In the same skillet, saute mushrooms and onions until tender. Add the water, bouillon and pepper; cook and stir until mixture comes to a boil, scraping up browned bits from bottom of pan. Reduce heat; stir in sour cream and heat through (do not boil). garlic powder
1/2 cup flour
3 tablespoons olive oil
1 medium onion, chopped
1 package brown gravy mix
1 can cream of mushroom soup
2 (4 ounce) cans mushrooms
1 cup long grain white rice
1 1/2 cups beef broth

Steps:

  • Cut cube steaks into serving size portions.

  • Place rice in saucepan, add broth.
  • Liquid should reach first knuckle on your finger.
  • Bring to boil, stir, cover, lower heat to simmer and cook about 15 mins.
  • Fluff with fork.

4 - cube steak patties
1 medium sweet onion, sliced
1 cup(s) carrots, chopped
1 cup(s) celery, finely chopped
3 clove(s) garlic, very finely chopped or crushed
2 - bay leaves
- olive oil
SAUCE
1 - 15 oz can, diced tomatoes w/oregano, basil and garlic, no salt added
1 cup(s) beef stock, homemade/low sodium
2 cup(s) mushrooms, sliced
1 teaspoon(s) balasamic vinegar
1 teaspoon(s) ea. cumin, garlic pwd, onion pwd, black pepper
1 teaspoon(s) worcestershire sauce
- long grain or brown rice or noodles

Steps:

  • Season cube steak with garlic pwd, onion pwd, black pepper, then lightly flour, the set aside.
  • In a deep skillet or a pot, add about 1/4 c. of olive oil, carrots, celery, onions, and garlic. Simmer, stirring often until tender. Move veggies to the side, add a little more olive oil if necessary, add cube steak and brown on each side.
  • Once meat is brown, add tomatoes, beef stock, cumin, garlic pwd., onion pwd, pepper, balsamic vinegar, worschestshire sauce,two bay leaves and salt. Cover and simmer for about 30. Add mushrooms, cover and simmer thirty minutes more. Turn meat half way through.
  • Serve over hot rice or buttered pasta
