IRISH RUTABAGAS(SWEDES OR YELLOW TURNIPS) WITH CARAMELIZED ONION

Irish Rutabagas(Swedes or Yellow Turnips) With Caramelized Onion image

Turnips became popular in Ireland as human food during the great famine and have remained popular. I especially like this combination of turnip and onion. Easy and economical to serve. For my way of cooking this recipe has far too much butter & oil. I would use a "No OIl" spray for the onions and perhaps 1 tbsp of butter. _ I love butter and I love the flavor it gives but------------------

KALROTSTAPPE, SCANDANAVIAN MASHED RUTABAGAS (VEGAN)

Kalrotstappe, Scandanavian Mashed Rutabagas (Vegan) image

(Ignore the 404 error post of the same name!!!) Rutabegas are called "swede" or "orange of the North" in Scandanavia. People often think rutabagas and turnips are one in the same but they are not, rutabagas are bigger, darker, and starchier. This version of kalrotstappe from "Cooking the Norwegian Way" calls for a potato to be added for extra nutrition and texture since the rutabagas alone won't mash easily. You can use any kind of non-dairy milk (or regular if you're not vegan), I think almond milk is best for this.

Time 40m

Number Of Ingredients 4

Coarse salt and freshly ground pepper
4 medium rutabagas, skin and lighter-colored layer just under skin peeled and discarded, cut into 3/4-inch cubes
6 tablespoons unsalted butter, melted
1/4 teaspoon freshly grated nutmeg

Steps:

Tips:

  • Choose the right rutabaga: Look for firm, smooth rutabagas with no blemishes or bruises.
  • Peel the rutabaga before cooking: The skin of a rutabaga is tough and bitter, so it should be peeled before cooking.
  • Cook the rutabaga until it is tender: Rutabagas can be cooked in a variety of ways, but they should always be cooked until they are tender. This can be done by boiling, roasting, or steaming.
  • Season the rutabaga to taste: Rutabagas have a mild flavor, so they can be seasoned with a variety of herbs and spices. Some popular options include salt, pepper, garlic, and thyme.
  • Serve the rutabaga as a side dish or main course: Rutabagas can be served as a side dish with roasted chicken or pork, or they can be used as a main course in soups, stews, and casseroles.
