Yield Makes 6 servings

Number Of Ingredients 8

1/4 cup (1/2 stick) butter
2 cups chopped onions
1 4-ounce piece pepperoni sausage, chopped (about 1 cup)
1/2 cup chopped red bell pepper
1/2 cup chopped yellow bell pepper
1/2 cup chopped green bell pepper
1 teaspoon dried marjoram
12 large eggs, beaten blend

Steps:

  • Melt butter in large nonstick skillet over low heat. Add onions and sauté until very tender, about 8 minutes. Add pepperoni, bell peppers and marjoram. Cook over low heat until bell peppers are crisp-tender, stirring occasionally, about 10 minutes. Pour in eggs. Stir over medium-low heat until eggs are just set, about 5 minutes. Transfer to bowl and serve.

Tips:

  • Choose High-Quality Ingredients: Use fresh, free-range eggs for the best flavor and texture. Opt for a high-quality salami with a good fat content for a richer taste.
  • Don't Overcook the Eggs: Cook the eggs over medium-low heat, stirring constantly, until they are just set. Overcooked eggs will be tough and rubbery.
  • Use a Non-Stick Skillet: A non-stick skillet will help prevent the eggs from sticking and make cleanup easier.
  • Season to Taste: Add salt, pepper, and other seasonings to taste. You can also add a splash of hot sauce or a sprinkle of paprika for extra flavor.
  • Serve Immediately: Salami scrambled eggs are best served immediately, while they are still hot and fluffy.

Conclusion:

Salami scrambled eggs are a quick, easy, and delicious breakfast or brunch recipe. With just a few simple ingredients, you can create a flavorful and satisfying meal that the whole family will enjoy. Whether you're looking for a hearty breakfast to start your day or a simple brunch dish to serve to guests, salami scrambled eggs are a great option.
