1 onion, chopped
2 pounds summer squash, sliced diagonally 1/2 inch thick

Steps:

  • Cook and stir bacon in a skillet over medium heat until crisp, 8 to 10 minutes. Add onions and cook in the bacon drippings until softened, 3 to 5 minutes. Add squash, salt, and black pepper; stir to coat.
  • Cover skillet and cook squash mixture over low heat until tender, about 25 minutes.

1 tablespoon butter
2 lbs summer squash, washed and cut into disks
3/4 teaspoon salt
1 tablespoon sugar or 1 tablespoon sugar substitute
fresh ground pepper

Steps:

  • Heat skillet over medium-high heat and add in oil and butter.
  • When fat is heated add squash and turn to coat.
  • Allow the squash to cook for a few minutes without stirring to start to brown.

6 small boneless skinless chicken breasts (1-1/2 lb.)
1 tub (8 oz.) PHILADELPHIA Cream Cheese Spread
3 Tbsp. milk, divided
1 tsp. dried Italian seasoning
1/2 tsp. garlic powder
2 small each yellow squash and zucchini, cut lengthwise in half, then sliced crosswise
3 cups cooked orzo pasta
2 Tbsp. thinly sliced fresh basil

Steps:

  • Melt butter in large skillet on medium heat. Add chicken; cook 6 to 7 min. on each side or until done (165ºF). Transfer to plate; cover to keep warm.
  • Mix cream cheese spread, 2 Tbsp. milk and dry seasonings until blended. Mix 1/4 cup with remaining milk in small microwaveable bowl; set aside. Add vegetables to same skillet; cook 5 min. or until crisp-tender, stirring frequently. Stir in remaining cream cheese mixture; cook and stir 2 min. 2 tablespoons extra virgin olive oil
1 1/2 pounds medium or small zucchini or other summer squash, thinly sliced or diced depending on what shape squash you use
2 garlic cloves, minced
1 pound ripe tomatoes, grated on the large holes of a box grater, or peeled, seeded and diced
Salt
freshly ground pepper
1 to 2 tablespoons chopped or slivered fresh basil (to taste)

Steps:

  • Heat 1 tablespoon of the olive oil over medium-high heat in a wide, heavy skillet. Add the zucchini. Cook, stirring or shaking the pan, until the zucchini is lightly seared and beginning to soften, three to five minutes. Remove from the pan, and set aside.
