3/4 cup plus 1 tablespoon water (70° to 80°)
2 tablespoons molasses
2 tablespoons butter, softened
1 cup sauerkraut, well drained and chopped
1 tablespoon caraway seeds
2 tablespoons brown sugar
1-1/2 teaspoons salt
1 cup rye flour
2 cups bread flour
1 package (1/4 ounce) active dry yeast

Steps:

  • In a bread machine pan, place all ingredients in order suggested by manufacturer. Select the basic bread setting. Choose light crust color and loaf size if available. Bake according to bread machine directions (check dough after 5 minutes of mixing; add 1 to 2 tablespoons water or flour if needed).

1 ½ tablespoons molasses
1 ½ tablespoons butter
1 ½ tablespoons brown sugar
1 teaspoon caraway seed

2 cups bread flour
1 ½ teaspoons active dry yeast

Steps:

  • Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select Basic Bread Cycle; press Start.

I got this recipe in a bread book for bread machines. I have used it for several years now. You can also use it without a bread machine. I have posted a picture of the correct pan to use when making this bread in order to brown properly.

Number Of Ingredients 13

1 3/4 c all- purpose or bread flour
1/2 c rye flour
1 Tbsp dry milk
2 Tbsp sugar
1 Tbsp margarine
1 tsp salt
7/8 c water (3/4 cup + 2 t.)
2 Tbsp caraway seed - crushed
2 Tbsp drained sauerkraut
1 pkg. yeast or 2 ¼ t.
EGG WASH
1 small egg
2 Tbsp cold water

Steps:

  • 1. I put in bread machine.
  • 2. When ready, take out & knead a few times in flour .
  • 3. Shape into loaf & place in a loaf pan sprayed with pan coating first. Cover & let rise until doubled in size.
  • 4. Just before baking, beat egg & water in cup. Brush top of bread gently with egg wash. Bake @ 350° until browned, about 20 min.

  • Activate the yeast properly: Always check the expiration date of your yeast before using it. To activate dry yeast, dissolve it in warm water (105-115°F) with a little bit of sugar.
