SAUSAGE PANCAKE MUFFINS

Sausage Pancake Muffins image

My kids love sausage and pancakes but making them during the week was out of the question. I purchased the frozen variety on a stick but wasn't keen on the calories, additives or price. This version of pigs in a blanket is a great alternative that's much more cost effective. -Lisa Dodd, Greenville, South Carolina

Tips:

  • Use high-quality sausage. The sausage is the star of the show in this recipe, so make sure to use a good quality, flavorful sausage. Look for a sausage that is made with fresh, high-quality meat and has a good amount of seasoning.
  • Don't overmix the batter. Overmixing the batter will make the muffins tough. Stir just until the ingredients are combined.
  • Be careful not to overcook the muffins. Overcooked muffins will be dry and crumbly. Bake them just until a toothpick inserted into the center comes out clean.
  • Serve the muffins warm. Sausage pancake muffins are best served warm, right out of the oven. You can also reheat them in the microwave or toaster oven.
  • Get creative with your toppings. Sausage pancake muffins can be topped with a variety of different things, such as butter, syrup, maple butter, honey, and cheese. You can also add your favorite fruit or nuts.

Conclusion:

Sausage pancake muffins are a quick, easy, and delicious breakfast or brunch option. They're perfect for busy mornings or lazy weekends. You can customize them to your liking by adding different toppings or fillings. They're also a great way to use up leftover sausage.
