SAUTEED BRUSSELS SPROUTS WITH BACON AND ONIONS

Sauteed Brussels Sprouts with Bacon and Onions image

This is a simple yet delicious recipe that takes little time to put together. It's a tasty way to incorporate a healthy, and often snubbed, vegetable into one's diet. I've been cooking Brussels sprouts this way for years. I'm not sure where I got the recipe. Using fresh Brussels sprouts is preferred naturally, but if not readily available, frozen Brussels sprouts may be used instead. If using frozen Brussels sprouts, you may have to drain any excess liquid that is rendered while cooking the sprouts.

Yield Makes 8 servings

Number Of Ingredients 7

1 3/4 pounds brussels sprouts, outer leaves removed
2 tablespoons (1/4 stick) butter
3 tablespoons olive oil
12 medium shallots, thinly sliced (about 2 cups)
6 garlic cloves, thinly sliced
4 tablespoons pine nuts, toasted, divided
2 tablespoons fresh lemon juice

Steps:

  • Working in small batches, place brussels sprouts in feed tube of processor fitted with thin slicing disk; slice.
  • Melt butter with olive oil in large pot over medium heat. Add shallots; sauté until almost translucent, about 3 minutes. Add garlic; stir 1 minute. Add brussels sprouts; increase heat to medium-high and sauté until tender, about 8 minutes. Stir in 3 tablespoons pine nuts and lemon juice. Season with salt and pepper. Transfer to bowl. Sprinkle with remaining 1 tablespoon pine nuts and serve.

Tips:

  • Choose fresh, firm cabbage and Brussels sprouts. Look for cabbages that are heavy for their size and have tightly packed leaves. Brussels sprouts should be bright green and free of blemishes.
  • Slice the cabbage and Brussels sprouts thinly. This will help them cook evenly.
  • Use a large skillet or Dutch oven. You want to have enough room to cook the cabbage and Brussels sprouts in a single layer.
  • Cook the bacon until it is crispy. This will add flavor and texture to the dish.
  • Caramelize the shallots. This will add a sweet and savory flavor to the dish.
  • Season the cabbage and Brussels sprouts with salt and pepper. You can also add other spices, such as garlic powder, onion powder, or paprika.
  • Cook the cabbage and Brussels sprouts until they are tender. This will take about 15-20 minutes.
  • Serve the cabbage and Brussels sprouts hot. You can garnish them with fresh parsley or chives.

Conclusion:

Sautéed cabbage and Brussels sprouts with bacon and caramelized shallots is a delicious and easy-to-make side dish. It is perfect for a weeknight meal or a special occasion. The combination of flavors and textures in this dish is sure to please everyone at the table.
