SHRIMP LOUIE SALAD

Shrimp Louie Salad image

The Louie salad is a California original that is usually served with shrimp or crab. My twist is to saute the shrimp, but you can also poach and chill them like the original. If using crab, just substitute cooked canned crab.

Time 20m

Yield 4 servings

Number Of Ingredients 17

1 cup olive oil mayonnaise
1/2 cup ketchup
1 teaspoon prepared horseradish

2 hearts romaine lettuce, washed and torn
2 ripe Roma tomatoes, cut into 6 wedges
1/2 English cucumber, thinly sliced

Steps:

  • For the dressing: Whisk together the mayonnaise, ketchup, horseradish, lemon juice, sugar, vinegar, Worcestershire and a pinch each of salt and pepper in a small bowl until smooth. Refrigerate until ready to use.
  • For the salad: To make medium-boiled eggs, put the eggs in a small saucepan and cover with cold water. Bring to a boil, then remove from heat, cover and let stand 5 minutes. Transfer to an ice bath. Remove the shells once cool and quarter each egg lengthwise.

LOUIS SEAFOOD SALAD

Louis Seafood Salad image

I once worked with a chef who made the most wonderful Louis dressing, but he wouldn't disclose his secret that made it so unusual and so good. Years later, he worked for my dad and told me his secret, the clove-flavored vinegar... you can't really taste it, but it adds something special! I'm sure he is long gone, so I feel free to pass on his secret.

Tips:

  • Choose the freshest seafood possible. This will ensure that your salad is delicious and flavorful.
  • Don't overcook the seafood. Overcooked seafood is tough and chewy. Cook it just until it is opaque and flakes easily with a fork.
  • Use a variety of seafood. This will add flavor and texture to your salad. Some good options include crab, shrimp, lobster, and scallops.
  • Make sure your dressing is well-balanced. The dressing should be tangy, creamy, and slightly sweet. Use a light hand with the mayonnaise so that the dressing doesn't overpower the seafood.
  • Serve the salad immediately. Seafood salad is best when it is served fresh. If you need to make it ahead of time, store it in the refrigerator for up to 24 hours.

Conclusion:

Seafood salad is a delicious and refreshing dish that is perfect for any occasion. It is easy to make and can be tailored to your own preferences. With a few simple tips, you can make a seafood salad that will impress your friends and family.
