3 eggs
1 1/4 cups oil
1 3/4 cups flour
1 1/4 cups bananas, over-ripe and mashed
1/4 teaspoon salt
1/4 teaspoon baking powder
1/2 teaspoon baking soda

  • Lightly grease and paper line 3 mini loaf pans.

  • Bake at 350 for 1 hour or until firm.

Tips:

  • Use ripe bananas for the best flavor and texture. The riper the bananas, the sweeter the bread will be.
