My Khmer sons both love this soup at our favorite Cambodian restaurant, Chez Sovan, in San Jose, CA. This is my attempt to match the flavors at home. My oldest son's comment on trying the soup was, Mmm so close, make some more! Serve with warm baguette.

10 whole black peppercorns
1 teaspoon soy sauce
1 (1/2 inch) piece fresh ginger, peeled and thinly sliced
4 dashes fish sauce
1 dried red chile pepper
4 stalks lemongrass, trimmed
water
8 ounces cubed cooked chicken

LEMONGRASS CHICKEN SOUP

Lemongrass Chicken Soup image

In Chinese cultures, lemongrass and cilantro are considered yin ingredients -- cooling elements that are ideal on hot days. The subtle heat of ginger and chile, combined with the bright aroma of fresh mint, enlivens this lightened rendition of chicken soup.

SHREDDED CHICKEN AND LEMON GRASS SOUP

Shredded Chicken and Lemon Grass Soup image

This is a low fat delicate, aromatic broth. It makes a lovely light supper or can serve up to six as a starter. For this soup i use the whole chilli, including the seeds, which, when blended with the other flavours, gives it a wonderful kick. Make sure you use whole thighs with the bones in as this contributes greatly to the flavour of the broth.

CHICKEN IN LEMONGRASS COCONUT BROTH

Chicken in Lemongrass Coconut Broth image

I made this soup after trying it at a Thai noodle house in my area. I just kept playing around with ingredients until I got something similar. I have the seasonings adjusted to my liking, however there is an adjustment guide in the footnotes if you would like a slightly different flavor. This soup is also good with rice or pasta, but ramen seems to be the favorite. You can use any flavor of ramen noodles.

Tips:

  • Use fresh lemongrass: Fresh lemongrass is essential for this soup, as it provides a bright, citrusy flavor. If you can't find fresh lemongrass, you can use dried lemongrass, but the flavor will be less intense.
  • Don't overcrowd the pot: When adding the chicken and vegetables to the pot, don't overcrowd it. If the pot is too crowded, the ingredients will not cook evenly and the soup will be less flavorful.
  • Simmer the soup until the chicken is tender: The soup should simmer for at least 30 minutes, or until the chicken is cooked through. This will allow the flavors to develop and the chicken to become tender.
  • Serve the soup with your favorite toppings: This soup is delicious served with a variety of toppings, such as rice, noodles, or vegetables. You can also add a dollop of sour cream or yogurt for a creamy touch.

Conclusion:

This shredded chicken and lemongrass soup is a delicious and easy-to-make soup that is perfect for a quick and healthy meal. The soup is flavorful and satisfying, and it can be easily customized to your liking. With its bright, citrusy flavor and tender chicken, this soup is sure to be a hit with your family and friends.
