1 tablespoon olive oil
1 diced tomato
1 green onion, chopped
1 pinch salt and pepper
8 cooked large shrimp, peeled and deveined
1 pinch dried red pepper flakes, to taste for heat (I say be generous with it)
4 eggs, beaten
1 pinch dried oregano (or tsp of fresh chopped oregano, I used dry in order to make the meal faster)
2 ounces crumbled feta cheese

Steps:

  • Preheat oven to broil.
  • In frying pan, heat a little oil over medium heat and add the tomato and green onion. Season with salt and pepper. Heat for around 3 minutes, until tomatoes are starting to break down. Add the shrimp and red pepper flakes. Mix well to coat in tomatoes, and cook for just a minute to warm through.
  • Heat a broiler-safe frying pan over medium heat. Add a little olive oil, and when hot, pour in half the beaten eggs, seasoning them well with salt and pepper first. Cook for 1-2 minutes until the underside of the egg is beginning to set but the top remains runny.
  • Sprinkle the oregano over the omelette, then pour half the tomato and shrimp mixture over the top, making sure the shrimp are in an even layer. Crumble over the feta cheese, season with salt and pepper, and add a drizzle of oil.
  • Place the omelette under the hot broiler, and broil for 3-4 minutes until the egg is just cooked through. Remove, serve, and enjoy.

4 tablespoons good olive oil, divided
1 1/2 cups medium-diced fennel
1 tablespoon minced garlic (3 cloves)
1/4 cup dry white wine
1 (14 1/2-ounce) can diced tomatoes
2 teaspoons tomato paste
1 teaspoon dried oregano
1 tablespoon Pernod
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 1/4 pounds (16 to 20 per pound) peeled shrimp with tails on
5 ounces good feta cheese, coarsely crumbled
1 cup fresh bread crumbs (see note)
3 tablespoons minced fresh parsley
1 teaspoon grated lemon zest
2 lemons

Steps:

  • Preheat the oven to 400 degrees.
  • Heat 2 tablespoons of the olive oil in a 10-or 12-inch heavy ovenproof skillet over medium-low heat. Add the fennel and saute for 8 to 10 minutes, until the fennel is tender. Add the garlic and cook for 1 minute. Add the wine and bring to a boil, scraping up any browned bits. Cook for 2 to 3 minutes, until the liquid is reduced by half. Add the tomatoes with the liquid, tomato paste, oregano, Pernod, salt, and pepper to the skillet. Simmer over medium-low heat, stirring occasionally, for 10 to 15 minutes.
  • Arrange the shrimp, tails up, in one layer over the tomato-mixture in the skillet. Scatter the feta evenly over the shrimp. In a small bowl, combine the bread crumbs, parsley, and lemon zest with the remaining 2 tablespoons of olive oil and sprinkle over the shrimp.
  • Bake for 15 minutes, until the shrimp are cooked and the bread crumbs are golden brown. Squeeze the juice of 1 lemon over the shrimp. Serve hot with the remaining lemon cut into wedges.

My best French friend Cecile introduced me to Espelette pepper powder and I can't get enough of it! It's a red pepper powder from French commune of Espelette that is mildly spicy and full of flavor. This pasta dish combines Espelette pepper with shrimp and feta and the three ingredients work together beautifully. I like to call this dish Les Pates de Cecile (Cecile's Pasta). For additional flavor and a nice presentation, you can crumble some additional feta over each serving and drizzle with extra-virgin olive oil.

3 tablespoons olive oil
1/2 cup dry white wine
1 teaspoon dried basil leaves

2 lbs large shrimp, uncooked
1 medium sized onion, finely chopped
2 teaspoons extra virgin olive oil
1 cup chopped green onion
2 cloves garlic, crushed
2 cups diced peeled tomatoes
1/2 cup dry white wine or 1/2 cup non-alcoholic wine
1/4 cup chopped flat leaf parsley
1/2 teaspoon dried oregano
salt
pepper
4 ounces fat-free feta cheese

Steps:

  • Preheat oven to 450 degrees.
  • Remove shells from shrimp, leaving last segment and tail intact; remove vein.
  • Rinse and dry.
  • In a pan saute onion in oil until transparent, (adding a few drops of water if necessary), add garlic and green onion and cook 2 minutes more.
  • To the onions add the tomatoes, wine, half the parsley, oregano, and salt and pepper to taste.
  • Reduce heat, cover and simmer for 30 minutes until thickened.
  • Pour half the sauce into a shallow casserole, and arrange the shrimp on top.
  • Pour the rest of the sauce on, and sprinkle crumbled feta over the shrimp.
  • Bake at 450 degrees for 10-12 minutes or until prawns are pink and feta is lightly browned.

Ok, folding over an omelet, French-style, isn't easy and for the longest time, I wouldn't try it. But, really, I found it's pretty simple once you try a few times. Now, I do it daily. Also, don't be fooled by restaurants who offer 3-egg omelets: in the average, 9" pan, that many eggs will result in an omelet too thick to easily fold over the ingredients. Stick with two eggs, and you'll fare better.

1 teaspoon olive oil
1 tablespoon garlic (minced)
2 large eggs
2 teaspoons skim milk
1/8 teaspoon thyme (dried)
salt and black pepper
1/2 ounce feta cheese
1 ounce shrimp (pre-cooked or canned)
1/2 ounce spinach (baby leaves, no stems, finely chopped or chiffonade)

Steps:

  • Using a non-stick, 9" skillet or omelet pan, heat the oil over medium-low heat and add the minced garlic.
  • In a bowl, whisk together the eggs, skim milk, and thyme. Season the eggs with a pinch of salt and a few grinds of fresh, black pepper.
  • When the garlic is just barely browning on the edges, pour the egg mixture into the skillet and, tilting it slightly or stirring, slosh it around so it covers all the garlic and the bottom of the pan.
  • Keep an eye on the omelet as the eggs stiffen. When the bottom of the eggs are fairly solid but there is still a good amount of liquid eggs on top, sprinkle the feta cheese over the eggs.
  • Continue cooking for about 2-3 more minutes and , then, make a thin line of shrimp about one-third of the way across the eggs. On top of that, sprinkle the finely chopped spinach in a row (reserving a pinch for garnish).
  • With a slender spatula (or turner), loosen the edges of the eggs from the skillet. Then, slide the spatula under the third of the omelet that has the shrimp and spinach on it. Fold the eggs over the ingredients towards the center of the omelet and hold, there, for just a few moments.
  • Over the serving plate, slide the omelet out -unfolded side first- and roll the already folded section over the flatter portion. You may have to do this several times on subsequent attempts to get the hang of it.
  • Sprinkle the top of the omelet with the reserved spinach and serve.

Tips:

  • Use fresh, high-quality ingredients. This will make a big difference in the flavor of your omelette.
  • Don't overbeat the eggs. Overbeaten eggs will make your omelette tough.
