1 lb spaghetti
1/2 lb tomatoes (seeds removed, roughly chopped)
4 -5 garlic cloves, minced
1 dozen large basil leaves, torn into smallish pieces
3 tablespoons olive oil
kosher salt and pepper

Steps:

  • Cook pasta according to package directions.
  • Put tomatoes in a bowl with the garlic, basil and olive oil - season with salt & pepper.
  • Drain pasta, add to bowl and toss well with tomato mixture.
  • Serve with shredded parmesan cheese.

This simple dish has great flavor... largely due to the fresh tomatoes and prominent basil! I used 3 large tomatoes when I prepared the dish, but feel free to adjust to your liking.

1 medium loaf french bread cut into 1 inch slices
4 medium tomatoes, chopped
8 oz mozzarella cheese, grated
1/4 c grated parmesan cheese
1/2 small onion, chopped
1/2 small sweet red (bell) pepper, chopped
1 bunch fresh basil, chopped
2 clove chopped garlic
3 Tbsp balsamic vinegar
3 Tbsp extra virgin olive oil
1 tsp coarse sea salt (to taste)
1 tsp coarse ground black pepper (to taste)
1 tsp fresh oregano (or 2 tsp. dried)

Steps:

  • 1. Mix all ingredients except cheese and bread in a mixing bowl. Set aside and let flavors blend.
  • 2. Toast bread to light, golden brown and remove from oven.
  • 3. Mix mozzarella and parmesan cheeses.
  • 4. Spoon tomato mixture onto bread. Drizzle with juice (tomato, oil, vinegar) from mixing bowl. Top with cheese. Continue until all ingredients are gone.
  • 5. Place in oven at 400 degrees for 20 minutes or until cheese is melted and golden. Remove and serve!
