1 cup (2 sticks) chilled unsalted butter, cut into 1/2-inch pieces
1/4 teaspoon vanilla extract
2 cups all purpose flour

Add flour and process until blended but still slightly crumbly, occasionally scraping down sides of bowl. Gather dough into ball; flatten into disk. Wrap in plastic and refrigerate 30 minutes.

Cool completely. Using thin spatula, carefully transfer wedges to platter. (Shortbread can be prepared up to 4 days ahead. Store in airtight container at room temperature.)

SIMPLE WHIPPED SHORTBREAD

This is an adaptation from an old Canadian Living Recipe. It is simple, a small batch, and easy to manage on a busy day. The original recipe called for Rice Flour and well as Flour, but I substituted Cornstarch just fine.

SIMPLE SCOTCH SHORTBREAD

This super fast, crumbly, buttery-rich shortbread is our family's favorite cookie!

Provided by Sarah Farrand

Categories     Cookies

Time 1h5m

Number Of Ingredients 3

1/2 lb butter, room temperature
1/2 c sugar
2 c all purpose flour

Steps:

  • 1. Preheat your oven to 325 degrees.
  • 2. Cream together the butter and sugar. Add flour and mix until just combined. The dough will be crumbly.
  • 3. Press the dough together into a rectangle or circle onto an ungreased cookie sheet. Try to make the dough uniformly thick, even on the edges, roughly 3/4" thick. Prick the dough all over with a fork. I usually prick mine in a grid so I have lines to cut on when then they are baked.
  • 4. Bake 1 hour or until just golden. Cut into squares while still warm. Let cool, and enjoy!

Tips:

  • Use high-quality butter: The quality of your butter will greatly impact the flavor of your shortbread. Look for a butter that is made from fresh cream and has a high butterfat content.
  • Chill your ingredients: Chilling your butter and flour before you start baking will help to create a more tender and flaky shortbread.
  • Work the dough quickly: Once you start mixing the dough, work it quickly to avoid overworking it. Overworking the dough will make it tough.
  • Don't overbake the shortbread: Shortbread is best when it is slightly underbaked. The edges should be just starting to turn golden brown.
  • Let the shortbread cool completely before cutting it: This will help to prevent the shortbread from crumbling.

Conclusion:

Shortbread is a classic Scottish cookie that is loved by people all over the world. It is a simple and easy-to-make cookie that can be enjoyed on its own or with a variety of toppings. With just a few simple ingredients, you can create a delicious and satisfying treat that is perfect for any occasion.
