1 pound lean ground beef, turkey, or pork
1/2 cup diced green bell pepper ((2 oz, or 1/2 of a pepper))
1/4 cup diced onion ((1 oz))
1 clove garlic minced or pressed
1/4 cup tomato paste
2 tbsp Low carb brown sugar
1 tbsp yellow mustard (or Dijon)
2 tsp red wine vinegar
2 tsp Worcestershire sauce
1 cup beef broth (or water with 1 tsp of beef base)
1/4 tsp each, salt and pepper

Steps:

  • Gather ingredients. Chop green bell pepper and onion. Mince or press garlic.
  • Place the ground beef (or turkey or pork) in a medium frying pan and turn the heat to medium. Break meat up into tiny pieces as it cooks. This will take about 7 minutes.
  • When the meat is almost cooked through, stir in all of the other ingredients, finishing with the water, last. Bring up to a simmer, turn down to medium low and simmer uncovered for about 15 minutes. Taste and adjust seasonings at the end.

1 -1 1/2 lb ground beef
2 -3 stalks celery, chopped
1 small onion, chopped
1 (8 ounce) can tomato sauce
1/4 cup low-carb ketchup, preferably with splenda
1/4 cup low-carb barbecue sauce (your favorite, or use more low carb ketchup)
1 tablespoon brown sugar substitute, we like ideal brown
1 teaspoon dry mustard
salt and pepper
1 tablespoon Worcestershire sauce
1 tablespoon vinegar
cheese, like Velveeta cheese, to taste
1 large lettuce leaf

Steps:

  • In a skillet, brown the ground beef, onion and celery.
  • Drain off the fat, so the sauce sticks to the meat.
  • Add the rest of the ingredients and let simmer on low on the stove for 20-40 minutes, or longer.
  • Wrap meat and cheese in lettuce and enjoy!

If I don't have some low-carb bread or a low carb tortilla, I will wrap it in a lettuce leaf or sprinkle it over my green salad for a heartier and tasty luncheon salad.

1 lb lean ground beef
1 green pepper (finely diced)
1 small onion (finely diced)
2 tablespoons Worcestershire sauce
1 tablespoon soy sauce
1/2 cup sugar free ketchup

Steps:

  • Brown and break up the ground beef in a large skillet and continue cooking until the meat is no longer pink.Then add the diced green pepper and onion to the cooked beef and continue cooking for a few more minutes.
  • Add the Worcestershire sauce, soy sauce and ketchup and turn down heat to a low simmer for 15 minutes. Add a little water, if needed, to keep the mixture just moist but, not soupy.
  • Serve with some mayo on low carb bread or wrapped in a low carb tortilla or a lettuce leaf or over a tossed green salad. Enjoy!
