Now that I've moved back down south, I wanted to create my own version of the delicious dip. You can find smoked whole whitefish or fillets in the seafood department of most grocery stores.

Yield Serves 4

Number Of Ingredients 9

6 tablespoons olive oil
3/4 cup finely chopped shallots (about 3 large)
1 1/2 tablespoons finely chopped garlic
1 1/2 pounds cherry tomatoes, halved (about 24 tomatoes)
1/2 cup plus 2 tablespoons finely chopped fresh parsley
3/4 teaspoon dried crushed red pepper
18 ounces smoked whitefish (chubs),* skinned, boned, coarsely flaked
9 ounces fresh linguine
*Available at delicatessens, fish markets and some supermarkets.

Steps:

  • Heat oil in heavy large skillet over medium heat. Add shallots and garlic. Sauté until shallots begin to soften, about 2 minutes. Reduce heat to medium-low. Add tomatoes, 1/2 cup parsley and crushed red pepper and stir until tomatoes are just tender, about 8 minutes. Add whitefish and cook until heated through, about 3 minutes.
  • Meanwhile, cook pasta in large pot of boiling salted water until tender but still firm to bite, stirring occasionally. Drain. Return to pot.
  • Toss fish mixture with pasta. Season with salt and pepper. Transfer pasta to bowl. Sprinkle with 2 tablespoons parsley.

Tips:

  • Choose the right whitefish: Use a firm-fleshed whitefish such as cod, halibut, or tilapia. Avoid using flaky fish such as salmon or trout, as they will not hold together well in the pâté.
  • Smoke the whitefish properly: The key to a good smoked whitefish pâté is to smoke the fish properly. Make sure to use a smoker that is properly calibrated and that you follow the manufacturer's instructions for smoking the fish.
  • Use fresh ingredients: The fresher the ingredients, the better the pâté will taste. Use high-quality cream cheese, sour cream, and herbs.
  • Don't overmix the pâté: Overmixing the pâté will make it tough. Mix the ingredients just until they are combined.
  • Chill the pâté before serving: Chilling the pâté before serving will help it to set and firm up.

Conclusion:

Smoked whitefish pâté is a delicious and versatile appetizer that can be enjoyed on its own or with crackers, bread, or vegetables. It is also a great way to use up leftover smoked whitefish. With a little planning and effort, you can easily make your own smoked whitefish pâté at home.
