A nice quick entree after a hectic day at work. From Bon Appetit magazine. I saute the chicken longer than the time specified to make sure it's cooked through, or pound the breasts thinner.

Time 55m

Yield 4 servings

Number Of Ingredients 12

2 tablespoons unbleached all-purpose flour
1 teaspoon onion powder
1 teaspoon paprika
1/4 teaspoon cayenne pepper, or to taste
Coarse salt and freshly ground black pepper
1 tablespoon canola oil
4 chicken leg quarters (2 pounds)
2 onions, sliced
2 cloves garlic, very finely chopped
1 cup homemade chicken stock or reduced-fat low-sodium chicken broth, warmed
2 sprigs fresh thyme
1 bay leaf, preferably fresh

Steps:

  • Heat the oven to 350 degrees F. Combine the flour, onion powder, paprika and cayenne pepper in a shallow dish. Season with salt and black pepper and stir to combine.
  • Heat the oil in a large ovenproof skillet over medium-high heat until shimmering. Pat the chicken dry and place in the flour-spice mixture, turning to dust on both sides. Shake off the excess. Add the coated chicken to the hot oil and sear until brown, 1 to 2 minutes per side. Remove to a plate.
  • Add the onions to the oil remaining in the skillet and reduce the heat to medium. Season the onions with salt and black pepper. Cook, stirring occasionally, until the onions are golden brown, 5 to 7 minutes. Add the garlic and cook until fragrant, 45 to 60 seconds.
  • Tip the remaining flour mixture into the onions and stir to coat and combine. Stir in the warmed chicken stock and increase the heat to medium high. Bring to a boil. Reduce the heat until the mixture simmers. Add the reserved chicken with any accumulated juices, nestling it into the onions, and the thyme and bay leaf. Transfer the skillet to the oven and cook until the juices of the chicken run clear when pierced with a knife and the temperature reads 165 degrees F when measured with an instant-read thermometer, about 30 minutes. Taste and adjust the seasoning with salt and black pepper. Discard the thyme sprigs and bay leaf. Serve the chicken immediately.

Time 53m

Yield 2

Number Of Ingredients 11

2 skinless, boneless chicken breasts
1 teaspoon dried oregano
¼ teaspoon cayenne pepper
1 pinch salt and ground black pepper to taste
1 tablespoon butter
1 (8 ounce) package chopped white mushrooms
¼ cup chopped white onion
1 tablespoon Worcestershire sauce
1 pinch salt and cracked black pepper to taste
1 splash red wine
½ cup shredded mozzarella cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).

Tips:

  • To achieve a golden-brown crust on the chicken, ensure the skillet is adequately heated before adding the chicken. Adjust the heat to medium-high.
  • Avoid overcrowding the skillet with chicken pieces. This will prevent even cooking and result in steamed rather than seared chicken.
  • Season the chicken generously with salt and pepper before searing. This will enhance the flavor of the chicken and create a flavorful crust.
  • Use a combination of butter and olive oil to sear the chicken. Butter adds flavor, while olive oil prevents burning.
  • Cook the chicken for 3-4 minutes per side, or until golden brown. Do not move the chicken pieces around excessively during this process, as this will hinder the formation of a crispy crust.
  • Remove the chicken from the skillet and set aside while preparing the mushroom gravy.
  • To make the mushroom gravy, use a variety of mushrooms for added flavor. Cremini, shiitake, and oyster mushrooms are excellent choices.
  • Sauté the mushrooms in butter until they release their liquid and begin to brown. This will concentrate their flavor.
  • Add minced garlic and herbs, such as thyme and rosemary, to the mushrooms for extra flavor.
  • Gradually whisk in chicken broth and heavy cream to create a creamy and flavorful gravy.
  • Season the gravy with salt and pepper to taste. You can also add a splash of white wine or lemon juice for a brighter flavor.
  • Bring the gravy to a simmer and cook for 5-7 minutes, stirring occasionally. This will allow the flavors to meld and thicken the gravy.
  • Return the seared chicken to the skillet with the gravy and cook for an additional 5-7 minutes, or until the chicken is cooked through.
  • Serve the smothered chicken with creamy mushroom gravy over mashed potatoes, rice, or your favorite sides.

Smothered chicken with creamy mushroom gravy is a classic dish that is both comforting and flavorful. By following these tips, you can create a delicious and memorable meal that your family and friends will love. Whether you are a seasoned cook or a beginner, this recipe is sure to impress.
