Time 25m

Number Of Ingredients 6

2 c flour
1 c pecans, in pieces or walntes
1/4 c sugar
1 c butter, softened
1 tsp vanilla extract
powdered sugar

Steps:

  • 1. Heat oven to 325*f
  • 2. In a large mixing bowl combine all ingredients (except the powdered sugar)mix well on low speed for 2 to 3 minutes scraping the sides of the bowl several times.
  • 3. I spoon enough dough into my (clean) hands and roll into small balls.
  • 4. Place one inch apart on a non greased cookie sheet and bake for 18 to 25 minutes or a light golden brown on the bottom of cookie. These cookies break easy when hot so you have to be careful when checking.

Tips:

  • Chilling the dough: For the best texture, chill the dough for at least 30 minutes before baking. This will help the cookies hold their shape and prevent them from spreading too much.
  • Using a cookie scoop: To ensure uniform cookie sizes, use a cookie scoop to portion the dough. This will also help the cookies bake evenly.
  • Baking the cookies: Bake the cookies in a preheated oven at 350°F (175°C) for 10-12 minutes, or until the edges are just beginning to brown. Overbaking will dry out the cookies.
  • Rolling the cookies in powdered sugar: While the cookies are still warm, roll them in powdered sugar. This will give them a classic snowball appearance and a delicious sweetness.
  • Storing the cookies: Snowball cookies can be stored in an airtight container at room temperature for up to 3 days. They can also be frozen for up to 2 months.
