1 cup diced yellow bell pepper
3/4 cup diced red onion

2 tablespoons olive oil
1 large onion, finely chopped
2 cloves garlic, finely chopped
1/2 teaspoon cumin
1/4 teaspoon nutmeg

1/2 pound snow peas, blanched and shocked
1 large carrot, julienned

Steps:

  • Heat the oil in a large saucepan until almost smoking. Add the onions and cook until soft. Add the garlic, cumin, nutmeg, coriander and ginger and cook for 1 minute. Add the rice and coat with the oil and spices. Add the water, bring to a boil and season with salt and pepper to taste. Reduce the heat, cover the pot and cook for 15 to 18 minutes. Remove from heat, fluff with a fork and fold in snow peas, carrots and parsley. Serve at room temperature.

2 cups water
1 tablespoon sesame seeds
1/4 pound snow peas
1 large red pepper
1 teaspoon minced garlic in oil
1 tablespoon corn, safflower or canola oil
2 teaspoons Oriental sesame oil
2 tablespoons white-wine vinegar
2 teaspoons reduced-sodium soy sauce
Freshly ground black pepper to taste

Steps:

  • Combine the rice and water in a saucepan. Bring to a boil. Reduce the heat, cover, and cook for 17 minutes, until the water is absorbed and the rice is tender.
  • Toast the sesame seeds in a toaster oven until golden.
  • String, wash and then cut the snow peas in half.
  • Wash, core, seed and cut the red pepper in julienne strips.

Steps:

  • Place rice in a saucepan and cover with water. Mix with your fingers until water is cloudy; drain. Repeat once more. Add 1 1/2 cup water and 1 teaspoon salt. Bring to a boil; cook for 1 minute. 1/2 medium red bell pepper
1 1/2 teaspoons butter
2 tablespoons freshly squeezed orange juice

  • String snowpeas, wash in cold water, drain.

3 tablespoons coarsely chopped walnuts

1 large Belgian endive
3 cups watercress sprigs, coarse stems discarded

  • In a small bowl stir together the water, 1 tablespoon of the vinegar, the soy sauce, the sesame oil, the sugar, and a pinch of salt. In a bowl toss the shrimp with the garlic paste and 1 teaspoon of the olive oil and let the shrimp marinate for 10 minutes. In a non-stick skillet heat 2 teaspoons of the remaining olive oil over moderately high heat until it is hot but not smoking and in it sauté the walnuts, stirring, for 30 seconds.
