1 ⅓ cups sugar
2 eggs
½ cup flour
¼ cup cocoa powder
1 pinch salt
½ cup butter, melted
1 tablespoon vanilla extract
1 tablespoon butter
1 tablespoon cocoa powder
powdered sugar
1 cup berry, optional

Steps:

  • Preheat the oven to 350°F (180°C).
  • In a medium bowl, whisk the sugar and eggs until the mixture is pale yellow in color.
  • Sift in the flour, cocoa powder, and salt.
  • Fold until incorporated.
  • Mix in the butter and vanilla.
  • Grease a pan with butter and sprinkle cocoa powder to coat.
  • Pour in batter and smooth out. Batter will be very thick.
  • Bake for 20 minutes or until the top has hardened. The center should still be soft.
  • Sprinkle with powdered sugar.
  • Add berries (optional).

¼ cup unsweetened cocoa powder
1 pinch salt
2 eggs
1 ⅓ cups white sugar
1 tablespoon vanilla extract
½ cup butter, melted

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Lightly grease an 8-inch pie plate.
  • Sift together the flour, cocoa powder, and salt; set aside. Stir the eggs into the sugar until smooth. Add the flour mixture, and stir just until combined. Pour in the vanilla extract and butter; stir until well combined. Pour into prepared pie plate.

This is a Swedish (Scandinavian) dessert that is traditionally served during the holidays, specifically at Christmas. But you can eat it whenever if you like, because it is just that good. Getting the rennet may be a bit difficult, but can be an adventure to acquire. If you're traditional serve with lingonberries. If you're not, raspberries, blueberries, and strawberries work just the same. You can even make a berry sauce to drip over it too and/or top it with whipped cream. You can also add a graham cracker crust to the bottom.

1 cube raw milk
¾ cup all-purpose flour
1/2 rennet tablet
1 tablespoon water
1 teaspoon butter
5 large eggs
1 cup white sugar
1 cup whipping cream

Steps:

  • Mix 1 cup of cold milk with 3/4 cup of flour and stir to make a soft paste. Set it aside.
  • Dissolve the 1/2 tablet of rennet in water. Set it aside.
  • Heat the rest of the gallon of milk to lukewarm, 98 to 102 degrees F (36 to 39 degrees C). Remove from heat. Add the soft paste mixture and stir in the dissolved rennet. Stir often until milk begins to set; cover and let stand until firm, about 1 hour.
  • Break up the milk mixture and remove the whey. Do not make the curd too dry and treat with gentle hands so as not to break up the curds too much.
  • Preheat the oven to 400 degrees F (200 degrees C). Coat a 9x13-inch baking dish with 1 teaspoon butter.
  • Mix together eggs, sugar, and whipping cream. Add this cream mixture to the strained curd and mix. Pour combined mixture into the prepared baking dish and softly spread it out so that the top of the dessert is flat.
  • Bake in the preheated oven for 30 minutes. Reduce the heat to 325 degrees F (165 degrees C). Continue to cook until set and browned on top, about 30 minutes more. Let cool before serving and refrigerate when stored.

2 eggs
1 cup sugar
1 1/4 cups all-purpose flour
2 teaspoons cinnamon
1 teaspoon ground cardamom
1/2 teaspoon clove
1 1/2 teaspoons baking powder
1/3 cup water
1/4 cup butter
1 tablespoon breadcrumbs

Steps:

  • Preheat oven to 350°F.
  • Beat eggs until very light and fluffy. Add sugar gradually while beating.
  • Sift together flour, spices and baking powder. Fold this into the egg mixture gently, so as not to deflate eggs.
  • In a small saucepan, heat butter and water over low heat until butter has melted. Once butter melts, bring to a boil and add while still boiling hot to the batter (first mixture). Combine thoroughly.
  • Butter a 7 3/4 inch tube pan and sprinkle evenly with the bread crumbs. Pour cake batter into pan.
  • Bake in preheated 350°F oven 45-50 minutes or until cake tests done.
  • Serve unfrosted or dusted with icing sugar.
