SOUTHERN CANDIED SWEET POTATOES RECIPE - (4/5)

Number Of Ingredients 6

6 to 8 medium red sweet potatoes (I had 9 long, skinny ones), peeled and cut into chunks or thick slices
1 stick salted butter, 1/2 cup
2 cups sugar
1 1/2 teaspoons ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt

Steps:

  • Peel and chop potatoes as desired; then rinse and drain well in a colander. In a mixing bowl, whisk together the sugar, cinnamon, nutmeg, and salt. Set aside. Cut butter in chunks and melt in a large skillet (that has a cover) over medium heat. Add potatoes and stir to coat in the butter. Pour the sugar mixture over the potatoes and stir until coated well. Cover the skillet and cook over medium heat for 30-40 minutes, or until largest potato pieces are tender, stirring occasionally. (I use a toothpick to check for doneness.) Remove from heat, remove cover and let stand for 5-10 minutes before serving. Transfer to a serving dish and spoon sauce over top of the potatoes and serve.

Tips for Making Candied Sweet Potatoes:

  • Choose the right sweet potatoes. Look for firm, smooth potatoes that are free of blemishes. Avoid potatoes that are soft or have sprouts.
  • Peel the potatoes thinly. This will help the potatoes cook evenly and prevent them from becoming tough.
  • Boil the potatoes until they are tender. This will take about 15 minutes. Do not overcook the potatoes, as this will make them mushy.
  • Make the glaze. Combine brown sugar, butter, maple syrup, cinnamon, nutmeg, and ginger in a saucepan. Bring to a boil over medium heat, stirring constantly. Reduce heat to low and simmer for 5 minutes, or until the glaze has thickened.
  • Toss the potatoes in the glaze. Place the boiled potatoes in a large bowl and pour the glaze over them. Stir until the potatoes are evenly coated.
  • Bake the potatoes. Spread the potatoes in a single layer on a baking sheet. Bake at 400 degrees Fahrenheit for 30 minutes, or until the potatoes are caramelized and slightly crispy.
  • Serve immediately. Candied sweet potatoes are best served warm. They can be served as a side dish or as a dessert.

Conclusion:

Candied sweet potatoes are a delicious and easy-to-make side dish that is perfect for any occasion. They are also a great way to use up leftover mashed potatoes. With just a few simple ingredients, you can create a dish that is sure to impress your family and friends. So next time you are looking for a sweet and savory side dish, give candied sweet potatoes a try!
