I received this recipe from a friend in Barbados. It reminds me of a corn pudding, or very soft cornbread.

PENNSYLVANIA DUTCH CORN PIE
This is my mom's corn pie. We grew up eating this and loving it in the heart of Amish country. It is a very hearty dish, and easy to make. Give this one a try before you decide you won't like it. Corn takes on a whole different flavor made this way. Some people add cooked chicken to the pie as well.

Steps:
- Preheat the oven to 425 degrees F (220 degrees C).
- In a saucepan over medium heat, stir together the potato, whole kernel corn, creamed corn, hard cooked eggs, salt, pepper and milk. Simmer for about 15 minutes.
- Press one of the pie crusts in to the bottom and up the sides of a 9 inch pie plate. I like to use clear glass so I can check the bottom crust for doneness. Pour the hot filling into the crust. Dot with pieces of butter. Cover with the top crust, and flute the edges to seal. Cut a few slits in the top crust to vent steam. Place on a cookie sheet that has been lined with aluminum foil for easy clean up.
- Bake for 30 minutes in the preheated oven, then reduce the temperature to 350 degrees F (175 degrees C). Bake for an additional 10 minutes, or until the crust is browned. Serve hot.

SWEET SOUTHERN CORNBREAD
Steps:
- Preheat the oven to 375 degrees F.
- Place two 8-cavity mini loaf pans in the oven to heat up.
- Meanwhile, in a large bowl, whisk together the cornmeal, cake flour, sugar and baking powder.
- In a medium bowl, whisk the buttermilk, oil, eggs and salt to a uniform color. Quickly but gently fold the liquid mixture into the dry mixture. It should be a loose batter, not a dough.
- Carefully remove the loaf pans from the oven and quickly spray with cooking spray.
- Divide the batter evenly among 12 cavities of the loaf pans and bake until the tops are golden brown and a toothpick inserted in the middle comes out clean, 28 to 30 minutes. Rotate the pans 180 degrees halfway through baking.
- Immediately turn the cornbread loaves out of the pans onto a cooling rack to cool. This will also ensure they build a crisp crust.

BEST SOUTHERN PECAN PIE -- DIFFERENT
Same flavor, but not the ooey-gooeyness. Uses brown sugar instead of karo syrup. I checked Zaar and couldn't find the same recipe. The USA southeast area has used this recipe for years. It is a Blue Ribbon WINNER! I would not go back to the syrup recipe. This makes 2 pies using a regular size pie shell and freezes well if you want to freeze one. Butter is best, but you can use margarine. (It is important to use the cornmeal in this recipe.) I prefer my pecans in broken pieces because the slices will cut better. Easy to make and easy to travel to a potluck. You'll be glad you tried this delightful pie!!

Tips:
- Use fresh corn. Fresh corn is sweeter and has a better flavor than frozen or canned corn. If you can't find fresh corn, you can use frozen or canned corn, but be sure to drain it well before using.
- Don't overcook the corn. Overcooked corn will be tough and chewy. Cook it just until it is tender, about 5-7 minutes.
- Use a good quality cheese. The cheese is one of the main ingredients in this recipe, so it's important to use a good quality cheese that you enjoy. A sharp cheddar cheese or a Monterey Jack cheese are both good choices.
- Season the cornbread batter well. The cornbread batter should be seasoned with salt, pepper, and other herbs and spices to taste. This will help to give the cornbread a flavorful crust.
- Bake the cornbread until it is golden brown. The cornbread should be baked until it is golden brown on top and a toothpick inserted into the center comes out clean.
Conclusion:
Southern corn pie is a delicious and easy-to-make dish that is perfect for any occasion. It is a great way to use up fresh corn and it is also a good way to get your kids to eat their vegetables. With its creamy corn filling, cheesy cornbread crust, and crispy bacon topping, this pie is sure to be a hit with everyone who tries it.
