1 cup granulated sugar
8 (8-in.) square spring roll pastry wrappers (such as Spring Home)
1 large egg, beaten
3 qt.s vegetable oil
1 cup packed dark brown sugar
1/2 cup (4 oz.) salted butter
6 tablespoons (3 oz.) rum
2 tablespoons heavy cream
2 teaspoons black pepper
1/2 cup toasted pecan halves
Butter-pecan ice cream

Steps:

  • Prepare the bananas: Place granulated sugar in a shallow pie plate or baking dish. Toss bananas in sugar; shake off excess.
  • Place 4 spring roll wrappers on a work surface with 1 point facing you (so that they look like diamonds). Place 1 banana on each wrapper, 1 inch above bottom point. Carefully begin wrapping banana from the bottom up, keeping the roll as tight as possible. Fold in the sides of the wrapper (like a burrito). Brush 1 inch of top point with some of the beaten egg, and continue to wrap, pressing to secure roll. Repeat with remaining bananas, wrappers, and egg. Place rolls in a single layer on a sheet pan lined with a damp paper towel. Freeze 1 hour.
  • Heat oil to 325°F in a large Dutch oven. Fry banana rolls, 2 or 3 at a time, until golden brown, 6 to 7 minutes. Drain on paper towels.
  • Prepare the sauce: Cook brown sugar and butter in a skillet over medium-high, whisking constantly, until melted and bubbly, 3 to 4 minutes. Tilt pan away from you, and carefully add the rum, whisking until smooth. Remove pan from heat, and stir in cream and pepper.
  • Slice banana rolls in half diagonally. Spoon sauce over top, sprinkle with pecans, and serve with ice cream.

3 tablespoons unsalted butter
3 tablespoons packed brown sugar
2 bananas, peeled and halved lengthwise and crosswise
2 fluid ounces rum
1 fluid ounce banana liqueur
2 pinches ground cinnamon
2 scoops vanilla ice cream
2 small sprigs of mint

Steps:

  • Melt butter and brown sugar together in a skillet over medium-high heat until butter melts and mixture begins to bubble, 3 to 5 minutes.
  • Place bananas, cut-side down, in brown sugar mixture. Cook until just golden, about 30 seconds; flip and cook until golden on the other side, about 30 seconds.
  • Remove from heat. Pour rum and banana liqueur into skillet; return skillet to high heat. Cook until alcohol ignites and flames, 1 to 3 minutes; add cinnamon. When flames die, remove skillet from heat.
  • Scoop vanilla ice cream into 2 bowls. Divide bananas mixture between bowls and garnish with mint sprigs.

1 (18 1/4 ounce) size white cake mix, any brand
1 1/3 cups water
3 tablespoons oil
3 large eggs
1 cup mashed banana (about 3 small)
1/4 teaspoon ground ginger
1/2 cup rum, divided
1/4 cup butter
1/3 cup firmly packed dark brown sugar
1/2 teaspoon ground cinnamon
4 medium ripe bananas, sliced
1 (5 1/8 ounce) box instant vanilla flavor pudding and pie filling
2 cups milk
0.5 (8 ounce) package cream cheese, softened
3 tablespoons powdered sugar
1/4 teaspoon vanilla extract
1 (8 ounce) container frozen whipped topping, thawed
1 (1 ounce) semisweet chocolate, baking square grated

Steps:

  • Prepare cake mix according to package directions,(the 1 1/3 cup water, 3 T. oil, 3 large eggs, adding mashed bananas and ginger to the mix. Pour mixture into a lightly greased and floured 13 X 9 inch pan.
  • Bake at 350 degrees for 35 to 40 minutes or until a wooden pick inserted in center comes out clean. Brush cake with 1/4 cup rum. Cool in pan 20 minutes. Crumble into 2 inch chunks.
  • Melt butter in a large skillet over medium-high heat; add dark brown sugar and cinnamon, and cook 1 minute. Add sliced bananas, and cook, stirring constrantly, 2 to 3 minutes or until bananas are tender. Remove from heat, and pour remaining 1/4 cup rum over banana mixture. Pour mixture into a large bowl. Let cool 15 minutes. Cover and chill 1 hour.
  • Prepare pudding mix as directed, using 2 cups milk; stir into banana mixture. Cover and chill 2 hours.
  • Place half of banana cake chunks in a large trifle dish. Spread half of pudding mixture over cake. Top with half of Cream Cheese Topping. Repeat layers once. Sprinkle with grated chocolate.
  • To make Cream Cheese Topping:.
  • Beat first 3 ingredients at medium speed with an electric mixture until smooth. Stir in whipped topping until well blended.

2 firm ripe bananas, sliced
6 tablespoons light brown sugar
1 tablespoon light corn syrup
1 tablespoon butter
2 tablespoons dark rum
1/4 teaspoon ground cinnamon
1 (8 ounce) package cream cheese, softened
1/2 cup butter, softened
1 (16 ounce) package powdered sugar, sifted
1 tablespoon milk
2 teaspoons vanilla extract

Steps:

  • Cake: preheat oven to 350°; beat butter and sugars at medium speed with an electric mixer until fluffy.

Anybody who has Brennan's Bananas Foster will tell you how WONDERFUL they are. I did not see a similar one on Zaar, so I am posting it - hope you enjoy!

1/2 cup whipping cream
1 cup granulated sugar
1 cup firmly packed brown sugar
1/4 cup rum
1 tablespoon banana extract
4 cups milk
1/4 cup butter
2 cups stale French bread cubes
1/2 cup butter
1/3 cup firmly packed brown sugar
1/4 cup dark rum
1/2 teaspoon banana extract
2 bananas, sliced

Steps:

  • Stir together first 6 ingredients for pudding in large bowl.
  • Heat milk and butter in large saucepan over medium-high heat until melted, stirring constantly (do not boil).
  • Stir about one-fourth of hot milk mixture gradually into egg mixture, add to remaining hot milk mixture, stirring constantly.
