SPANISH RICE

Spanish Rice image

Of course, I don't believe this dish is Spanish at all, but rather Cajun from Louisiana. I made it quite often in the 1960s. Then - as now - in home cooking, one had to watch the cost, and rice was an inexpensive way to fill out a meal; after all, rice feeds half the world.

SPANISH RICE WITH TOMATOES AND CHEESE

Spanish Rice With Tomatoes and Cheese image

If you want to encourage your family to eat healthy brown rice - this is one way of tempting them! The colour of the rice isn't as noticeable due to the tomatoes; and I always found that even the fussiest of children would try most things if they included a little cheese. Nutty brown rice and cheese are perfect partners (plus anything else you have to hand: peas, sweetcorn etc) and ingredients I often put together when my boys were growing. Having never thought about recording the quantities however, I was pleased to see a recipe with all the same basic ingredients I use on the netcooks website.

Tips:

  • Choose the right rice: Use medium-grain rice, such as Valencia or Calrose, for a fluffy and flavorful dish. Rinse the rice well before cooking to remove any starch and prevent it from becoming sticky.
  • Prepare the vegetables: Dice the tomatoes, onions, and bell peppers into small pieces for even cooking.
  • Use a flavorful broth: Use chicken or vegetable broth instead of water for a more flavorful dish.
  • Cook the rice in a covered pan: This will help the rice cook evenly and prevent it from drying out.
  • Simmer the rice until it is tender: This will take about 18-20 minutes. Do not overcook the rice, or it will become mushy.
  • Add the vegetables and salsa: Stir in the vegetables and salsa during the last 5 minutes of cooking. This will help the vegetables retain their crunch and flavor.
  • Fluff the rice with a fork: This will help separate the grains of rice and make it light and fluffy.
  • Serve immediately: Spanish rice is best served immediately after cooking. It can be served as a side dish or as a main course.
