1 cup white sugar
1 ⅓ cups peanut butter
1 cup white corn syrup
4 cups high protein crisp rice and wheat cereal
1 teaspoon vanilla extract
1 pinch salt

Steps:

  • Blend syrup, sugar, vanilla and salt in a 2 quart microwave-safe dish. Cook on high 4 minutes, or until mixture boils and sugar dissolves.
  • Stir in peanut butter, then add the cereal.
  • Drop by teaspoonfuls onto waxed paper. Let cool before storing.

5 C Special K Cereal

Steps:

  • Have everything pre-measured and ready to go...this can set up fast. Over medium heat, stir sugar, corn syrup, vanilla and salt until boiling and sugar has melted. Stir in Peanut Butter. Stir in Cereal. Drop cookie size onto wax paper and let harden. Makes about 2-3 dozen depending on size.

A retro-recipe from the 60's. Who knew Special K could be so yummy? My girlfriend Debbie brought these to my 2004 christmas cookie exchange. Her mom made these when she was little. The recipe used to be on the back of Special K boxes. She called her mom for the recipe and luckily, after all these years, she still had it! Thanks Sue!!

1 (11 ounce) package butterscotch chips
1 cup peanut butter
10 cups Special K cereal

Steps:

  • In a stovetop pan on low heat, melt butterscotch chips. Once the chips begin to melt, add the peanut butter. Stir often.
  • Once these ingredients are melted, add the cereal, mix/stir thoroughly. Drop by tablespoon full onto wax paper covered cookie sheets. Refrigerate. Makes 6 dozen.
