SPICED NUT CAKE
The hazelnuts can be replaced with chopped almonds or walnuts and multi-coloured glace cherries and mixed peel instead of cranberries. We prefer the cranberries and hazelnuts. Freezes well and is nice to have available over the holiday season.

SPICED NUT CAKE RECIPE

Steps:
- READY IN: 1hr 15mins YIELD: 1 loaf Sift together the dry ingredients and make a hole in the center. Stir in the orange juice, butter, water and egg. Beat together until all the flour is incorporated. Stir in the cranberries and nuts. Grease and line a 9 x 5 loaf tin. Spoon in the mixture and bake in a preheated oven at 325 degrees for 1 hour until a skewer inserted into the centre comes out clean. Remove from tin, peel off the paper and dust with icing sugar. Slice and serve warm or cold with butter or cream cheese.
Tips:
- Choose the right nuts: Use fresh, good-quality nuts for the best flavor. A variety of nuts can be used, such as almonds, walnuts, pecans, hazelnuts, or macadamia nuts.
- Toast the nuts: Toasting the nuts enhances their flavor and makes them more fragrant. Spread the nuts on a baking sheet and toast in a preheated oven at 350°F for 10-15 minutes, or until fragrant.
- Grind the nuts finely: For a smooth, even texture, grind the nuts finely in a food processor or blender.
- Use a light touch when mixing the batter: Overmixing the batter can result in a tough, dense cake. Mix just until the ingredients are combined.
- Bake the cake at a moderate temperature: A moderate oven temperature (350°F) helps to prevent the cake from becoming dry or overcooked.
- Let the cake cool completely before frosting: This allows the cake to set and makes it easier to frost.
Conclusion:
With its moist, tender crumb and rich, nutty flavor, this spiced nut cake is a delicious treat that is perfect for any occasion. The cake is easy to make and can be customized with different types of nuts and spices. Serve the cake with a dollop of whipped cream or a scoop of ice cream for a truly indulgent dessert.
