  • Add the onion, bell pepper, celery and green onions and sauté until the onions are translucent (approx. 4-5 minutes).
  • Add the garlic, creole/cajun seasoning, oregano and thyme and sauté for 30-60 seconds until fragrant. OPTIONAL: For a less "greasy" final broth, add 2 Tbsp of flour with the garlic and spices.
  • Add the chicken broth, rice, tomatoes and bay leaf, stirring to combine. Bring the soup to a simmer and then reduce the heat to medium-low. Cook until the rice is tender, approx. 15 minutes. Continue to stir, occasionally, so the rice doesn't burn.

  • Taste and add extra salt or creole seasoning, to your preferred level. Fish out the dried bay leaves.
  • Transfer to individual bowls and enjoy immediately.

ITALIAN SAUSAGE AND SHRIMP SOUP

Italian Sausage and Shrimp Soup image

This is a hearty and very flavorful soup with lots of fresh ingredients... and a kick! I serve it with crusty italian bread and California Zinfandel.

Provided by LynnAlex

Categories     Stew

Time 1h20m

Yield 6 serving(s)

Number Of Ingredients 16

1 lb bulk Italian sausage
1 lb shrimp, peeled and de-veined
2 tablespoons olive oil
1 quart chicken stock
1 (14 1/2 ounce) can diced tomatoes
1 onion, chopped
2 stalks celery, with leaves chopped
4 red potatoes, diced
1 bay leaf
1 head garlic, chopped
1 teaspoon kosher salt
1 teaspoon pepper
1 cup Baby Spinach, roughly chopped
1/4 cup Italian parsley
1 dash of crushed red pepper
grated parmesan cheese (optional)

Steps:

  • In a large pot heat olive oil and add garlic and onion, cook for 2 minutes.
  • Add sausage and cook until almost brown.
  • Add celery and cook for 3 minutes.
  • Add potatoes, diced tomatoes, chicken stock, bay leaf, salt and pepper.
  • Bring to a boil, reduce heat and simmer for 20 minutes.
  • Add shrimp, spinach, parsley and red pepper.
  • Simmer for 30 minutes.
  • Serve with grated parmesan cheese.

Tips:

  • Use high-quality ingredients. Fresh, flavorful ingredients will make a big difference in the taste of your soup. Look for plump, juicy shrimp, and spicy, flavorful chicken sausage.
  • Don't overcrowd the pot. If you add too much shrimp and chicken sausage to the pot, it will be difficult for the flavors to meld and the soup will be bland. Cook the shrimp and sausage in batches if necessary.
  • Season the soup well. A good spicy chicken sausage and shrimp soup should be flavorful and well-seasoned. Use a variety of spices, such as paprika, cumin, chili powder, and garlic powder, to create a complex flavor profile.
  • Let the soup simmer. Simmering the soup for a while allows the flavors to develop and deepen. The longer you simmer the soup, the better it will taste.
  • Serve the soup with your favorite toppings. Some popular toppings for spicy chicken sausage and shrimp soup include rice, crusty bread, chopped cilantro, and sour cream.

Conclusion:

Spicy chicken sausage and shrimp soup is a delicious, hearty, and flavorful soup that is perfect for a cold winter day. It is easy to make and can be tailored to your own taste preferences. By following these tips, you can make a spicy chicken sausage and shrimp soup that is sure to impress your family and friends.
