1.5 packed cups of fresh basil
1 garlic clove
¼ cup toasted pine nuts, plus extra to go on top
⅓ cup diced mango
juice of 1 small lemon
⅓ cup olive oil
pinch of red pepper flakes
salt & pepper
sliced cucumbers, for serving

Steps:

  • In a small food processor, place the basil, garlic, pine nuts, HALF the mango, lemon juice, salt and pepper. Pulse until everything is incorporated. Add the olive oil and pulse a few more times. Taste and adjust seasonings.
  • Pour the pesto into a small bowl and stir in the remaining diced mango, extra pine nuts, and a few pinches of red pepper flakes.
  • Serve with sliced cucumbers or crostini

2 tablespoons distilled white vinegar, plus more to taste
1 small Scotch bonnet or habanero chile (seeds removed, if less heat is desired), finely chopped (1 1/2 teaspoons)
1 teaspoon Worcestershire sauce

Steps:

  • Heat oil in a saucepan over medium-high. Add onion, garlic, and 1 teaspoon salt; cook until onion is translucent, about 3 minutes. Steps:
