1 cup water
1 tablespoon dried minced onion
1 cube chicken bouillon
½ teaspoon garlic powder
¼ teaspoon dried rosemary
¼ teaspoon dried thyme
¼ teaspoon salt
3 tablespoons coconut oil
2 tablespoons curry powder
½ teaspoon ground red pepper (cayenne), or more to taste
1 pound pork tenderloin, cut into strips
2 ½ tablespoons all-purpose flour
1 cup coconut milk
¼ cup natural peanut butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat water, dried onion, chicken bouillon, garlic powder, rosemary, thyme, and salt in a microwave-safe bowl for 1 minute in the microwave; let stand until onion is rehydrated and bouillon is dissolved.
  • Heat coconut oil, curry powder, and ground red pepper in a large oven-proof skillet over medium heat, stirring constantly, until oil takes on the color of the curry powder, 5 to 6 minutes.
  • Cook and stir pork tenderloin slices in coconut oil mixture until pork begins to brown. Sprinkle flour over pork; cook and stir until slices cook through; 2 to 3 minutes more.
  • Stir bouillon mixture, coconut milk, and peanut butter into pork mixture; bring to a boil, stirring constantly. Cover skillet with an oven-proof lid and transfer to oven.
  • Cook pork in the preheated oven until tender and sauce is bubbling, about 45 minutes. Remove from oven, remove lid, and rest pork for 10 minutes to allow sauce to thicken.

Time 15m

Yield 6 servings

Number Of Ingredients 19

2 1/2 pounds ground pork
2 teaspoons ground coriander
2 teaspoons curry powder
2 teaspoons Worcestershire sauce
1 teaspoon cayenne pepper
3 scallions, chopped
2 large clove garlic, finely chopped
Salt and freshly ground black pepper
2 tablespoons olive oil
6 hamburger buns
1 head butter lettuce
2 to 3 tomatoes, sliced
Spicy Ketchup, recipe follows
1 clove garlic, minced
1 tablespoon butter
1 cup ketchup
1/2 teaspoon red pepper flakes
1/4 teaspoon cayenne pepper
1 scallion, finely chopped

Steps:

  • In a large bowl, using your hands mix together pork, coriander, curry powder, Worcestershire, cayenne, scallions and garlic, seasoning well with salt and pepper. Make 6 even patties and put in refrigerator until ready to cook. Heat a large fry pan over medium-high heat, add oil. Sear patties until golden brown on both sides and cooked through, about 5 minutes per side. Cook in batches, if necessary. Serve inside hamburger buns topped with lettuce leaf, tomato slice and spicy ketchup.
  • In a saucepan over medium heat, lightly saute garlic in butter, about 2 minutes. Add ketchup, red pepper flakes and cayenne pepper. Cook another 5 minutes. Remove from heat and stir in scallions. Cool before serving.

Tips:

  • Choose the right cut of pork: A pork shoulder or pork butt is the best cut of meat for this curry. It's a tough cut of meat, but it becomes tender and flavorful when cooked slowly in the curry sauce.
  • Brown the pork before adding it to the curry: Browning the pork adds flavor and color to the dish. Be sure to brown the pork in batches so that it doesn't steam.
  • Use a variety of spices: The spices in this curry are what give it its unique flavor. Be sure to use a good quality curry powder, and feel free to add other spices that you like, such as cumin, coriander, and turmeric.
  • Don't be afraid to adjust the heat level: This curry can be made as mild or as spicy as you like. If you like your curry spicy, add more chili peppers or cayenne pepper. If you prefer a milder curry, omit the chili peppers or use a milder variety.
  • Serve the curry with rice or naan: Curry is traditionally served with rice or naan. Rice is a good option for soaking up the curry sauce, while naan is a delicious way to scoop up the curry and its accompaniments.

Conclusion:

Spicy pork curry is a delicious and flavorful dish that is perfect for a weeknight meal. It's easy to make, and it can be tailored to your own taste preferences. Whether you like your curry mild or spicy, this recipe is sure to please. So next time you're looking for a new and exciting way to enjoy pork, give this spicy pork curry a try.
