SPICY ROASTED SWEET POTATOES WITH ORANGE & HONEY
By Karen and Ben Barker, from Fine Cooking, issue #47. I have slightly adapted this recipe as I wanted a bit more spice to these sweet potatoes. This is a great addition to any holiday spread.

Steps:
- Heat the oven to 400°F Lightly butter a large Pyrex or ceramic baking dish that can hold the sweet potato wedges in one layer.
- In a small saucepan, melt the butter. Whisk in the honey, orange juice, and spices. Put the sweet potatoes in the buttered baking dish, add the honey mixture, and toss the pieces well to coat them thoroughly. Arrange the sweet potatoes in a single layer; sprinkle with salt and pepper.
- Roast until the potatoes are browned and tender and the juices are bubbly and thickened, 45 to 55 minutes. To ensure even roasting, stir and baste several times with the pan juices, doing so more frequently toward the end of roasting. Serve at once.
PAN ROASTED VENISON WITH SPICY CRANBERRY MEXICAN CINNAMON SAUCE WITH WHIPPED SWEET POTATOES
Provided by Bobby Flay

Steps:
- Combine gin, port, thyme and juniper berries in a medium shallow baking dish. Add the venison and turn to coat. Cover and marinate in refrigerator for 30 minutes. Heat oil in a large saute pan over high heat until almost smoking. Remove the venison from the marinade and shake off excess. Season with salt and pepper to taste. Cook on one side until golden brown. Turn over, reduce heat to medium and continue cooking until medium-rare, 3-4 minutes.
- Heat butter in a medium saucepan over medium-high heat. Add the onions, celery and carrots and cook until soft. Raise the heat to high and add the port, cook until dry. Add the spices, cranberry juice, and chicken stock. Strain the sauce and discard solids. Return to pan to heat, whisk in the cold butter, stir in cranberries, and heat through. Season with salt and pepper to taste.
- In a bowl mash potatoes with rest of ingredients.

Steps:
- Preheat your oven to 450 degrees.
- Wash and scrub the sweet potatoes.
- Cut each sweet potato into bite-sized chunks (make each piece roughly about an inch).
- Add the sweet potato pieces, the extra virgin olive oil, cinnamon, and chipotle to a gallon-sized storage bag.
- Close the storage bag and shake, making sure all of the spices are evenly distributed on the pieces (otherwise you might find out what happens when too much chipotle sticks to an individual piece).
- Spread out the spiced sweet potato pieces in an even layer onto a baking sheet.
- Salt to taste.
- Bake the sweet potatoes in the oven for 15 minutes, then using a spatula to turn them, place them back in the oven for another 15-20 minutes. If you like them crisper, you can add a few minutes, just make sure to check on them so they don't burn. Serve them as they are, or you can dip them in ketchup like french fries.
SPICY SWEET ROASTED SWEET POTATOES
These have a sweet / salty / spicy flavor that makes them hard to quit eating! Once you've tried them, the recipe may not reach to the 6 or 8 people! I found a similar recipe, here at Zaar, but not quite the same.

SPICY MAPLE ROASTED PORK CHOPS AND SWEET POTATOES
This was another successful, tossed-together kitchen creation. It is best described as spicy pork chops surrounded by roasted sweet potatoes coated in a spicy maple glaze. The sweet potatoes turn out soft on the inside and somewhat crispy on the outside, and the pork chops turn out juicy and spicy. DH and I enjoyed eating a bite of sweet potato with each bite of pork chop. I like to leave the skin on my sweet potatoes when roasting due to its nutritional value and crispy texture, but feel free to peel if desired. This truly is spicy. If you desire to tone down the heat, please do use less cayenne pepper.

Steps:
- 1. Preheat oven to 425 degrees. Spray cooking spray lightly on a large foil-lined baking sheet. In a large bowl, combine olive oil, agave nectar, lime juice, garlic, fresh ginger and spices. Then add sweet potatoes and coat.
- 2. Pour sweet potatoes and seasonings on to roasting pan and spread them out into an even layer. Season with a little salt and pepper to taste.
- 3. Roast sweet potatoes in oven, stirring occasionally, for about 40 minutes or until they are golden brown, tender and caramelized. Remove from oven and place in serving dish. Garnish with fresh scallions.
Tips:
- Choose the right sweet potatoes: Look for firm, smooth sweet potatoes with no blemishes. Avoid any that are soft or have cuts or bruises.
- Scrub the sweet potatoes well: Use a vegetable brush to scrub the sweet potatoes under running water. This will help remove any dirt or debris.
- Cut the sweet potatoes into even-sized pieces: This will help them cook evenly. If the pieces are too large, they may not cook through, and if they are too small, they may overcook and become mushy.
- Toss the sweet potatoes with olive oil, salt, and pepper: This will help them roast evenly and develop a delicious flavor.
- Spread the sweet potatoes in a single layer on a baking sheet: This will help them roast evenly and prevent them from steaming.
- Roast the sweet potatoes at a high temperature: This will help them caramelize and develop a crispy exterior.
- Flip the sweet potatoes halfway through roasting: This will help them cook evenly.
- Serve the sweet potatoes immediately: They are best enjoyed hot out of the oven.
Conclusion:
Spicy roasted sweet potatoes are a delicious and healthy side dish that can be enjoyed with a variety of meals. They are easy to make and can be tailored to your own taste preferences. Whether you like them mild, medium, or spicy, these roasted sweet potatoes are sure to be a hit. So next time you are looking for a tasty and nutritious side dish, give this recipe a try. You won't be disappointed!
