2 cups uncooked glutinous white rice
2 ½ cups water
1 tablespoon rice vinegar
1 (5 ounce) can solid white tuna in water, drained
1 tablespoon mayonnaise
1 teaspoon chili powder
1 teaspoon wasabi paste
4 sheets nori (dry seaweed)
½ cucumber, finely diced
1 carrot, finely diced
1 avocado - peeled, pitted and diced

Steps:

  • Bring the rice, water, and vinegar to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the rice is tender, and the liquid has been absorbed, 20 to 25 minutes. Let stand, covered, for about 10 minutes to absorb any excess water. Set rice aside to cool.
  • Lightly mix together the tuna, mayonnaise, chili powder, and wasabi paste in a bowl, breaking the tuna apart but not mashing it into a paste.
  • To roll the sushi, cover a bamboo sushi rolling mat with plastic wrap. Lay a sheet of nori, rough side up, on the plastic wrap. 1 ½ teaspoons togarashi (Japanese seven spice)

1 sheet nori, seaweed
4 ounces sushi rice
2 ounces sashimi grade tuna, chopped
2 teaspoons scallions, sliced thin widthwise
2 tablespoons fish roe (flying fish egg)
2 tablespoons pickled ginger (optional)
2 tablespoons wasabi (optional)
6 tablespoons soya sauce (optional)
2 tablespoons japanese mayonnaise
2 teaspoons chili sauce

Steps:

  • Place the sheet of seaweed on your working space.
  • Take the sushi rice and place on top of the sheet, working it's way down to cover the whole sheet. (NOTE: it is easier to work with sushi rice if your hands are wet).
  • Mix all the rest of your ingredients together, along with the Spicy Sauce.
  • Flip your seaweed sheet with the sushi rice on it sushi rice down.
  • Place the tuna mixed with the other ingredients in the center of the seaweed.
  • Roll the seaweed sheet up and around the tuna and then take a bamboo sheet and make sure the roll is compacted and shaped.
  • Cut the roll into 4, 6 or 8 pieces.
  • Serve with the ginger, wasabi and soy sauce if desired.

2 cups Japanese short-grain white rice
3 cups water
3 tablespoons rice vinegar
2 ½ tablespoons white sugar
4 sheets nori (dry seaweed)
4 ounces yellowtail flounder
¼ cup Japanese mayonnaise (such as Kewpie®)
1 tablespoon Sriracha sauce
¼ medium cucumber, peeled and julienned
2 tablespoons tobiko (flying fish roe)

Steps:

  • Rinse rice under cold running water until water runs clear.
  • Combine rice and water in a large saucepan and bring to a boil. Lower heat to a simmer and cook for 10 minutes. Turn off heat and let rice sit without opening the lid for 20 minutes; the remaining steam continues to cook the rice.
  • Combine rice vinegar and sugar; stir until mostly dissolved. Once rice has finished steaming, fold in vinegar-sugar mixture. Let rice cool, 15 to 20 minutes.
  • Place one sheet of nori on a work surface with the shiny side down. Place 1/4 of the rice on the nori and spread it around evenly from edge to edge, about 1/4-inch thick. Flip nori over on top of a plastic-covered rolling mat. Repeat with remaining nori and rice.
  • Chop yellowtail into 1/4-inch cubes. Combine yellowtail, mayonnaise, and Sriracha in a bowl. Place 1/4 of the mixture, along with 1/4 of the cucumber, in a line along one of the short sides of the nori. Roll the mixture inside the nori using the rolling mat. Press roll tightly to form a uniform log. Spread 1/2 tablespoon tobiko in a long thin line across the top of each roll. Press rolls with rolling mat.
  • Cover rolls with plastic wrap and press with the rolling mat again. Using a very sharp, wet, clean knife, cut each roll into 8 even pieces. Remove plastic wrap, plate, and serve.

One 8-ounce red snapper fillet
5 tablespoons Kewpie mayonnaise
2 tablespoons sriracha
1 tablespoon wasabi paste, plus more for serving
2 cups cooked sushi rice, cooled to room temperature
1 1/2 tablespoons seasoned rice vinegar
4 nori sheets
1 English cucumber, peeled and sliced lengthwise into 1/2-inch wide strips
1 avocado, sliced crosswise into 1/2-inch pieces
2 tablespoons furikake spice
2 ounces salmon roe (about 1/4 cup)
Toasted sesame oil, pickled ginger and soy sauce, for serving

Steps:

  • Remove all skin, pin bones, blood lines and sinew from the snapper fillet. Slice the fillet lengthwise into long strips about 1/2-inch wide and refrigerate until ready to use.
  • Whisk together 2 tablespoons of the mayonnaise with the sriracha in a small bowl. In a separate small bowl, whisk together the remaining 3 tablespoons of mayonnaise with the wasabi paste and a splash of water if needed to loosen the mixture. In a medium bowl, gently combine the cooked sushi rice with the vinegar.
  • Lay a piece of plastic that is bigger than the nori sheet on a clean work surface. Lay a nori sheet on top of the plastic in the center. Dip your fingers in water as needed to keep them from sticking to the rice, then use your fingers to spread 1/2 cup of the sushi rice evenly on the nori sheet and gently press down. Flip the nori sheet over so the rice is face down.
  • Spoon about 2 teaspoons of the sriracha mayonnaise horizontally across the center of the nori sheet. Place 2 strips of snapper on top of the mayonnaise, then top with a strip of cucumber and 4 to 5 slices of avocado. Using the plastic wrap as a guide, roll the sushi as tight as possible into a log. Trim any excess nori as needed. Remove the plastic and use a sushi mat to form the sushi into a uniform round roll with a flat bottom. Repeat with the remaining ingredients to assemble three more rolls.
  • Cut each roll into 6 to 9 pieces. Use a spoon to smear about 1 tablespoon of the wasabi mayonnaise on one side of the serving plate. Place the sushi on the other side of the plate, then sprinkle with some of the furikake. Place about 1 tablespoon salmon roe on top of the wasabi mayonnaise and garnish the plate with a splash of toasted sesame oil. Serve immediately with pickled ginger, soy sauce and wasabi paste.

Steps:

  • 1. Wrap your bamboo mat with plastic wrap. This is necessary on order to prevent rice from sticking to the mat. 2. Take a Soy Paper sheet, and cut it in half. Place one half on the mat, with the shiny side facing down. 3. Grab a handful of prepared brown sushi rice, and spread it gently over the Soy Paper - about 1cm high. 3. Sprinkle a spoonful of Sesame Seeds and/or sesame seeds evenly over the rice. 4. Flip the Soy Paper so that the rice is now facing down. 5. Line up the Tempura Flakes or Tempura Yam sticks along the Soy Paper. 6. Next to it, line up thinly sliced avocado, cucumber, asparagus, cream cheese. 7. Roll. 8. Cut into 8 equal pieces. (For best results first cut in half, then cut each half into two, and then again.) 9. Arrange on Sushi Plate and decorate with Eel Sauce over the rolls (using a squeeze container works well) and add a dollop of Spicy Mayo. 10. Serve with Wasabi and Low Sodium Soy Sauce.
