This tasty fried rice dish with succulent prawns, Asian sauces and a chilli kick is a great place to start. Reheating cooked rice requires caution due to a bacterium that can cause food borne illness. When dealing with cooked rice you should refrigerate as soon as cooled and do not reheat more than once. Because this recipe uses cooked rice it should not be reheated again. Discard any leftovers.

Tips:

  • Mise en Place: Before you start cooking, make sure you have all your ingredients and equipment ready. This will help you stay organized and prevent any scrambling.
  • Fresh Ingredients: Use the freshest ingredients possible. This will make a big difference in the taste of your dish.
  • Adjust the Heat: If you don't like spicy food, you can reduce the amount of chili peppers or Sriracha sauce in the recipes.
  • Cook the Prawns Properly: Overcooked prawns can become tough and rubbery. Cook them just until they are opaque and pink in the center.
  • Make Sure the Rice is Fluffy: To make sure your fried rice is fluffy, use day-old rice. Freshly cooked rice will be too moist and sticky.
  • Use a Wok: A wok is the best pan for stir-frying. It allows you to cook the food quickly and evenly.
  • Add the Vegetables Last: Add the vegetables to the wok last so that they retain their crunch.
  • Stir-Fry in Batches: If you are cooking a large amount of food, stir-fry it in batches. This will prevent the food from becoming overcrowded and soggy.
  • Season to Taste: Always taste your food before serving and adjust the seasonings as needed.
