1 pound semisweet chocolate, chopped into chunks
2 cups heavy cream
1 teaspoon ground cinnamon
1/2 teaspoon cayenne
Strawberries, pretzel rods, and marshmallows for dipping

Steps:

  • In a double boiler add chocolate. Melt until smooth and then add the cream. Stir constantly. Once smooth, add the cinnamon and cayenne. Place into a fondue pot.
  • Serve with strawberries, pretzels, and marshmallows.

My comments submitted as a review when I first tried it were, "Excellent chocolate fondue. I cut the recipe in half and prepared it with Ghirardelli Semi-sweet chocolate and heavy cream. Hubby and I ate an entire pound of strawberries dipped in this luxury while watching movies tonight." I have made this many times since for just Hubby and I, and for guests. It is a very good chocolate fondue.

10 ounces bittersweet chocolate or 10 ounces semisweet chocolate, chopped into small pieces
1/2-3/4 cup half-and-half (or 1/2 to 3/4 cup milk plus 2 tablespoons unsalted butter) or 1/2-3/4 cup heavy cream (or 1/2 to 3/4 cup milk plus 2 tablespoons unsalted butter)
1/2 teaspoon vanilla extract

Steps:

  • To make the sauce, in a small bowl, combine the chocolate and 1/2 cup milk or cream and melt gently in a barely simmering water bath or microwave on Medium (50 percent) power for about 2 minutes.
  • Stir until smooth.
  • Add more liquid if the sauce seems too thick or look curdled.
  • Remove from the heat and stir in the vanilla.
  • Use warm fondue immediately or set aside until needed and rewarm briefly.
  • Have forks, skewers, or pretty (or goofy) swizzle sticks available for guests to dip with.
  • If the fondue gets too thick or cool, reheat gently (without boiling) for 1 minute in the microwave on Medium (50percent) power or set in a pan of barely simmering water.
  • Leftover sauce keeps several days in the refrigerator.
  • It is a prefect topping for ice cream.
  • Note: This is a versatile recipe that can be tailored to your taste and the type of chocolate you are using.
  • For the most intense chocolate fondue, use milk, rather than half-and-half or cream, and omit the butter.
  • For even greater intensity, choose a bittersweet chocolate labeled anywhere from 66 percent to 70 percent and use the greater amount of liquid called for.
  • Butter or cream results in a softer, mellower chocolate flavor.
  • Ideas for dipping: Kumquats or segments of seedless clementines, oranges, or ruby grapefruit- If possible, separate the citrus into segments without breaking the membrane.

Dipping foods
1 pint fresh strawberries
1 red apple, cored and sliced
1 green apple, cored and sliced
1 banana
1/4 cup jumbo cashews
1/4 cup Brazil nuts
Light chocolate sauce
1/2 cup unsweetened cocoa powder
1/4 cup sugar
2 tablespoons Splenda Granular
1/2 cup skim evaporated milk
1 1/2 teaspoons vanilla extract

Steps:

  • Thoroughly wash and dry strawberries and apples. Cut apples and banana into 3/4-inch-thick slices. Arrange all fruits and nuts on a plate. To make chocolate sauce, whisk together cocoa, sugar, and Splenda in a medium-sized bowl. Slowly pour in milk to make a paste. Mix together to remove lumps. Transfer to a medium-sized saucepan and bring to a low boil over low heat, stirring constantly. Remove from heat and stir in vanilla. Transfer chocolate sauce to fondue pot. Place pot over candle or canned heat burner. Slide fruit pieces onto fondue fork or toothpick and dip into sauce. For nuts, spoon sauce onto a plate and dip nuts in sauce by hand.

1 cup heavy cream (see Cook's note)
4 cinnamon sticks
8 ounces finely chopped semisweet chocolate
Cubed pound cake
Mini-bananas
Fresh or dried orange slices
Fresh or dried pears
Almond cookies
Coconut strips
Strawberries

Steps:

  • In small saucepan over medium heat, bring the cream and cinnamon sticks just to boil. Remove from the heat and set aside to steep for 15 minutes. Remove the cinnamon and discard.
  • Put the chocolate in a medium bowl. Bring the cream to a simmer, pour it over the chocolate, and let stand for 5 minutes. Stir the chocolate mixture until completely melted and smooth. Transfer the chocolate mixture to a fondue pot, and keep warm over a low sterno flame or in a large ramekin wrapped with a cloth napkin to keep it warm. Serve with a selection of the dippers.

1 1/2 cups heavy cream
1/4 cup whole milk
8 (4 inch) cinnamon sticks
2 teaspoons cardamom pods
1 teaspoon whole cloves
1 teaspoon black peppercorns
1/2 teaspoon ground ginger
1/2 teaspoon freshly grated nutmeg
8 ounces bittersweet chocolate, coarsely chopped

Steps:

  • In a small saucepan, combine the heavy cream with the milk and all of the spices and heat till it just starts to boil, then quickly remove from heat and let steep for 20 minutes.
  • Strain the cream into a bowl and wipe out the saucepan. Return the cream to saucepan and bring just to a boil(don't let it boil, just heat till bubbles appear). Remove from heat. Place the chocolate in the bowl and pour the hot cream over it. Let stand for about 3 minutes, then whisk until smooth. Transfer the fondue to a bowl and serve. Enjoy!
  • To prepare for gifts:.
  • For each gift, measure out the spices above into a small glass jar and give with 1/2 pound of chocolate and this recipe. Or prepare the fondue and pour into a smalll glass jar: It will stay fresh in the fridge for up to 4 days. Reheat gently in the microwave before serving.

1 cup heavy cream
4 tsp Instant coffee
10 oz of milk chocolate broken into chunks
(any milk chocolate will work as well as the next, the quality just depends on what you like and how much you are willing to spend)
4 tsb of Scotch whisky (or to taste of course)
Use any whisky or whiskey of your choice but i like Scottish, (blended of course, the good singles go straight in the glass)
Dippers:
Fresh fruit such as strawberries, melon balls, banana slices, orange segments.
Brownie bites, marshmallows, whatever your imagination allows.

Steps:

  • It is my preferance to cook this in a cooking pot over the hob before transferring to my pre heated fondue pot just as its serving time. Warm up the cream but do not let it boil Add the instant coffee and desolve. Gradully add the milk choclate chunks one handful at a time while stirring and melting. Add the whisky and keep stirring If you find it is too thin add more chocolate, too thick add more cream. When you are ready to serve, transfer it you your pre warmed fondue pot, start dipping and enjoy.

Tips:

  • Choose high-quality chocolate. The better the chocolate, the better the fondue will taste. Look for chocolate with a cocoa content of at least 70%.
  • Use a heavy-bottomed saucepan. This will help to prevent the chocolate from burning.
  • Stir the chocolate constantly. This will help to prevent it from seizing.
