SPINACH AND MANGO SALAD

Spinach and Mango Salad image

An out of this world salad that will have your dinner guests begging for the recipe. It is also versatile - summer berries are a nice alternative. I wouldn't normally tout a brand, but the only company I know that makes maple flavored balsamic vinegar is Wildly Delicious in their distinct tall blue bottles.

SPINACH AND MANGO SUBSTITUTE SALAD

Spinach and Mango Substitute Salad image

This recipe evolved from recipe #35547. The second time I wanted to make that recipe, I had nothing but the spinach leaves so I started substituting everything. The result was very well received, so I thought I would share it. I estimated the amounts so it might need a little tweaking. Bon Appetit.

SPINACH SALAD WITH MANGO CHUTNEY DRESSING

Spinach Salad With Mango Chutney Dressing image

I got this recipe with a jar of "Oak Hill Mango Chutney" in Sacramento, CA, about 12 years ago. I've since moved and can't get that brand, but it works just as well with any other mango chutney. This is a great "whole meal" salad for a light dinner or a brunch item. People love the unusual combination of ingredients. Interestingly, there is no oil in the dressing, but it has a rich mouth-feel. Can't call it low-fat, though!

Tips:

  • To select the best spinach for your salad, look for leaves that are deep green and crisp, avoiding any that are wilted or yellowed.
  • Fresh mangoes are the ideal choice for this salad, but if they are not available, frozen or canned mangoes can be used instead. Just be sure to drain and rinse them thoroughly before using.
  • If you don't have red onion on hand, you can substitute a white or yellow onion instead. Just be sure to slice it thinly so that it doesn't overpower the other flavors in the salad.
  • For a creamier dressing, use full-fat yogurt instead of Greek yogurt. You can also add a tablespoon of honey or maple syrup to the dressing for a touch of sweetness.
  • If you are short on time, you can use store-bought croutons instead of making your own. Just be sure to choose a variety that is flavored with herbs or spices, rather than plain.

Conclusion:

This spinach and mango substitute salad is a delicious and refreshing dish that can be enjoyed as a light lunch or dinner. The combination of sweet and tangy flavors, along with the crunchy textures of the spinach, mango, and almonds, makes this salad a truly unique and satisfying experience. Whether you are looking for a healthy and flavorful way to use up leftover spinach, or you are simply looking for a new and exciting salad recipe to try, this spinach and mango substitute salad is sure to please.
