Provided by CaliforniaJan

Categories     Rice

Time 45m

Yield 4 serving(s)

Number Of Ingredients 10

1 1/2 lbs fresh Baby Spinach, washed
3 tablespoons extra virgin olive oil
1 small onion, finely chopped
2 garlic cloves, finely chopped
1 small fresh red chili pepper, seeded and finely chopped
1 cup risotto rice
5 cups vegetable stock
salt
pepper
4 tablespoons pecorino cheese, grated

Steps:

  • Place the spinach in a large pan with just the water that clings to its leaves after washing. Add a large pinch of salt. Heat gently until the spinach has just wilted, then remove from heat and drain, reserving any liquid.
  • Either chop the spinach finely using a large knife or place it in a food; processor and process into a fairly course puree.
  • Heat the oil in a large, heavy saucepan. Add the onion, garlic and chile and cook over low heat, stirring occasionally for 4 - 5 minutes, until softened.
  • Add the rice and stir until all the grains are well coated, then pour in the stock and reserved spinach liquid. Bring to a boil over medium heat, then lower the heat and simmer for about 10 minutes.
  • Add the spinach and season with salt and pepper to taste. Cook for 5 - 7 minutes more, until the rice is tender. Check the seasoning and serve in warmed soup plates with the grated Pecorino cheese.

TOASTED RICE SOUP WITH SPINACH AND PARMESAN

Toasted Rice Soup with Spinach and Parmesan image

Provided by Food Network

Categories     side-dish

Time 45m

Yield 4 servings

Number Of Ingredients 11

1 cup long-grain white rice
2 tablespoons extra-virgin olive oil
1 large onion, chopped
4 garlic cloves, minced
1/2 teaspoon salt
1/2 teaspoon grated nutmeg
1/8 teaspoon cayenne
6 cups canned vegetable broth, or homemade
2 cups chopped fresh spinach leaves
1/3 cup grated Parmesan
1 teaspoon grated lemon zest

Steps:

  • Preheat oven to 350 degrees F. Place rice in a shallow baking pan and toast, stirring occasionally, until golden brown, 8 to 10 minutes.
  • In a large soup pot, heat olive oil over medium-high heat. Add onion and cook, stirring frequently, until golden, about 5 minutes. Stir in garlic, salt, nutmeg, cayenne, vegetable broth, and rice and bring to a boil. Reduce heat to low, cover, and simmer until rice is tender, about 12 minutes.
  • Stir in spinach, Parmesan cheese, and lemon zest, simmer until spinach is wilted, about 3 minutes longer, and serve.

Tips:

  • Use fresh spinach: Fresh spinach has a more vibrant flavor and color than frozen spinach. If you're using frozen spinach, be sure to thaw it completely before adding it to the soup.
  • Don't overcook the spinach: Spinach cooks very quickly, so be careful not to overcook it. Otherwise, it will become wilted and slimy.
  • Use a variety of vegetables: In addition to spinach, you can add other vegetables to this soup, such as carrots, celery, onion, and zucchini. This will make the soup more nutritious and flavorful.
  • Use a flavorful broth: The broth is the base of the soup, so it's important to use a flavorful broth. You can use chicken broth, vegetable broth, or even a combination of the two.
  • Season the soup to taste: Be sure to season the soup to taste with salt, pepper, and other spices. You can also add a squeeze of lemon juice or a dollop of sour cream for extra flavor.

Conclusion:

Spinach and rice soup is a hearty, healthy, and delicious soup that's perfect for a cold winter day. It's also a great way to use up leftover spinach. With its simple ingredients and easy-to-follow instructions, this soup is sure to become a family favorite.
