5 tablespoons unsalted butter
1 medium onion, peeled and cut into small dice (about 1 cup)
1/4 cup plus 1 tablespoon all-purpose flour
4 cups homemade or low-sodium canned chicken stock
2 pounds fresh spinach
Coarse salt
1/2 cup heavy cream (optional)
1 tablespoon extra-virgin olive oil
1/3 cup 1/4-inch cubes French bread

Steps:

  • Melt the butter in a medium saucepan over medium heat. Add onion and saute until translucent, about 5 minutes. Add flour and cook, stirring constantly, for 1 minute (the flour should not take on any color).
  • Pour in stock, whisking to incorporate fully, and bring to a boil. Reduce to a simmer and cook for 10 minutes, whisking fairly often, to cook out raw flour taste and thicken the liquid (it should reach the consistency of heavy cream).
  • Blanch spinach: Wash well and trim tough ends while bringing a large pot of water to a boil. Prepare an ice-water bath. Salt the boiling water generously and submerge all of the spinach. Blanch 30 seconds, just until wilted and bright green, then remove spinach with a spider or slotted spoon and immediately plunge into the ice-water bath to stop the cooking, stirring to cool more quickly. Squeeze spinach with your hands to remove excess liquid.
  • Working in batches (do not fill more than halfway), add spinach and veloute base into a blender and puree until smooth. (Alternatively, puree soup in a food mill, using either fine or coarse disk, a food processor, or with an immersion blender.) Pass soup through a fine sieve into a clean pot, pressing on solids with a flexible spatula to extract as much liquid as possible.
  • Set pot over low heat and whisk in cream, if using. (Thin with more stock or water, if necessary.) Cream soups are the best made just before serving, especially when using green vegetables, as the soup can lose some of its vibrant color. You can make the veloute base the day before; let cool completely then refrigerate in an airtight container.
  • Heat oil in a small skillet over medium heat. Add bread cubes and cook until crisp and golden brown.
  • Serve soup garnished with croutons.

  • In a large pot, cook spinach in boiling salted water until wilted; drain. When cool, squeeze out as much liquid as you can.

2 big yellow onions, coarsely chopped
3 tablespoons unsalted butter
2 cloves fresh garlic coarsely chopped

2 1/2 cups frozen petite peas
3 cups vegetable or chicken stock
1/2 cup light cream
1 tablespoon salt
Freshly ground black pepper
Fresh Mint Cream, recipe follows
1/2 cup finely chopped fresh mint leaves
1 cup sour cream
1/2 cup half-and-half
Salt and pepper

Steps:

  • Saute onions in the butter in a large soup pot over high heat, stirring occasionally to prevent onions from sticking until they begin to soften about 10 minutes. Add garlic, lower the heat to medium and continue cooking for another 10 minutes until onions are translucent. Stir in spinach and saute until wilted about 5 minutes more. Add peas and the stock to the pot and bring to a boil over high heat. Lower the heat and simmer, uncovered, for 10 minutes. Remove soup from heat and allow to cool for a few minutes.
  • Using a food processor puree soup in small batches (use a second bowl to pour puree in until all soup is pureed). Place puree back into pot, add cream and bring to simmer over low heat.
  • To serve, ladle soup into 4 large bowls and top with about 3 tablespoons of the fresh mint cream.

8 ounces cream cheese
8 ounces frozen chopped spinach
6 cups chicken stock
1 pint heavy cream
1 (13 -14 ounce) can artichoke hearts (drain and squeeze most of the juice out of the artichokes and cut in quarters or just pull them apar)
1 tablespoon minced garlic
1 1/2 teaspoons black pepper
2 teaspoons salt
1/2 yellow onion, chopped

Steps:

  • Start this creamy soup by adding six cups of chicken stock to a large soup pot and turn the heat on the stove-top to medium high.
  • When the stock begins to boil, reduce the heat to low medium and add eight ounces frozen cut spinach, half a chopped yellow onion, one tablespoon of minced garlic and the drained, squeezed and cut artichokes. Simmer for ten minutes.
  • Add the white salt and black pepper. Stir well.
  • Cut the cream cheese into small slices. Each time you cut a slice off, add it to the pot. Stir well until it's totally melted, approximately 5 minutes.
  • Add one pint of heavy cream to the pot and stir well. Simmer 5 more minutes.

3 small red potatoes
13 2/3 ounces artichoke hearts (from a can or tin)
4 cups chicken stock (2 cans college brand)
1/2 cup heavy cream
2 scallions or 1 leek
2 tablespoons olive oil
1 tablespoon butter or 1 tablespoon margarine
1 tablespoon minced garlic
1/2 cup idaho potato flakes
1/4 tablespoon ground cinnamon
1/4 cup baby carrots
1 tablespoon cilantro leaf, cleaned and chopped up
4 ounces laughing cow swiss cheese, 4 wedges
1/4 teaspoon nutmeg, grated

Steps:

  • Clean potatoes (leave the skin on), cut into small pieces, par-boil (don't overcook), and then set aside.
  • For the artichokes drain and squeeze out excess water, cut in half, sprinkle with cinnamon and set aside.
  • Cut baby carrots into small round pieces and set aside.
  • Clean scallions or leek, chop and set aside.
  • INSTRUCTIONS.
  • Line a metal pan with aluminum foil (for an easy clean-up), add melted butter or margarine and olive oil, add potatoes & artichokes (toss), roast in an oven until tops of vegetables are brown, turn vegetables and brown other side, set aside.
  • Place frozen spinach in a large pot and cook according to package instructions (add a little water as needed).
  • Using a hand blender/chopper, chop the cooked spinach a little more (does not have to be finely chopped/pureed).
  • Add chicken stock, butter or margarine, garlic, carrots, leek (if used) and cook for about 5 minutes. Add the potato flakes, heavy cream, nutmeg and cook on low heat for about another 3 minutes, stir often.
  • Place soup in individual bowls, then add roasted potato & artichokes on top, sprinkle with scallions (if used) and cilantro.
  • Enjoy!
  • NOTE.
  • You can roast any number of vegetables to your liking, as a topping for this soup. Also, you might want to have on the side a bowl of sour cream for guests/family to add to their individual bowels. Plus some warm pita bread or a hard pumpernickel bread would be real nice as well.

The best thing about this soup? It takes less than half an hour from chopping board to table; and is dead easy. Unlike starchy soups that need about 30-40 minutes to cook through, this soup only needs about 20 minutes. Just chop up your ingredients, bring to the boil, simmer, blend and serve. I can't seem to go past using whole roasted garlic in my soups. It just brings a depth of flavour that is hard to beat. I suppose, if you are on a winning blend - just keep spinning. If you want to really "go green", you can always add in more spinach. But I find this balance of vegetables works well. Once again, I rely on my beloved cashews to cream up this vegan soup. If you have a high-speed blender such as a Vitamix, you will get a soup that is velvety and smooth. Don't worry if you don't have one. You will still get a beautiful tasting result. It just won't be as smooth. You might have some pieces of cashew. But I don't mind that rustic touch.

1 cup organic zucchini (about 1 zucchini)
1 cup chopped red onion (about 1 medium onion)

1 roasted garlic, bulb

  • Place the garlic whole in the oven on about 400 for about 30 minutes until soft and roasted.
  • In a saucepan saute onions and scallions with a pinch of celtic sea salt to bring out the sweetness until translucent.

  • Add in stock and squeeze in roasted garlic pulp and bring to the boil.

2 bunches spinach, cleaned and chopped
1/2 cup plain flour
3 cups chicken stock (use the standard pack)
1 1/2 cups milk

  • Melt butter in the saucepan, add onion and sauté gently for 10mins, until soft, but not coloured.
  • Add the spinach to the onion, cover with a lid and cook gently for 4 minutes.

About 3 1/2 cups chicken broth
2 to 3 stalks celery, roughly chopped
2 carrots, peeled and roughly chopped
1 to 2 medium white potatoes, peeled and roughly cubed
1 shallot, roughly chopped
1 clove garlic, roughly chopped
1/2 green bell pepper, roughly chopped
2 cups fresh spinach
1/4 to 1/2 cup heavy cream
Fresh dill, as needed, optional
Salt
Pinch white pepper
1 tablespoon olive oil
2 cups fresh spinach, roughly chopped
1 red bell pepper, finely diced
1 shallot, thinly sliced
Salt and freshly ground black pepper
Red chile flakes, as needed, optional
6 to 8 raw octopus tentacles
2 to 3 tablespoons good olive oil
Juice of 1/2 lemon
Finely chopped fresh dill or other fresh herbs, as needed

Steps:

  • For the cream of spinach soup: Add the chicken broth, celery, carrots, potatoes, shallots, garlic and bell peppers to a medium pot. Bring to a boil over medium-high heat. Reduce to a simmer on medium-low heat and cook until the potatoes are tender, about 20 minutes. Strain the soup, reserving the broth and vegetables separately.
  • Add the cooked vegetables, fresh spinach and heavy cream to a blender in batches and puree. Add enough of the reserved broth to the puree until it reaches the desired consistency. Add the dill if using. Season with salt and a pinch of white pepper.
  • For the spinach and red pepper saute: In a saute pan, heat the olive oil until hot. Add the spinach, bell peppers, shallots, some salt and pepper and red chile flakes if using and saute until the spinach and peppers are tender, 2 to 4 minutes. Set aside.
  • For the grilled octopus: Prepare a grill for medium-high heat. Clean the octopus well, removing the outer membrane from each tentacle.
  • Mix together the olive oil, lemon juice, chopped dill, red chile flakes and some salt and pepper in a medium bowl. Add the octopus and let marinate for 3 to 5 minutes.
  • Grill the octopus, allowing some parts to char slightly for good flavor, 8 to 12 minutes depending on the thickness of the tentacles. Do not overcook or the octopus will become chewy and dry. Set aside.
  • Spoon some soup into each bowl. Lay a piece of octopus in the center, and add a dollop of the spinach and red pepper saute.

1/3 cup minced onions
3 tablespoons butter
4 cups fresh spinach, cut into thin shreds
1/2 teaspoon salt
5 1/2 cups boiling chicken broth
2 egg yolks
1/2 cup whipping cream
1 to 2 tablespoons butter

Steps:

  • Cook the onions slowly in the butter in a covered saucepan for 5 to 10 minutes, until tender and translucent but not browned. Stir in the spinach and salt, cover and cook slowly for about 5 minutes or until the leaves are tender and wilted. Sprinkle in the flour and stir over moderate heat for 3 minutes. Off heat, beat in the boiling stock. Simmer for 5 minutes and correct seasoning. Can be set aside at this point. Blend the yolks and cream in a mixing bowl. Beat a cupful of hot soup into them by driblets. Gradually beat in the rest of the soup in a thin stream. Return soup to saucepan and stir over moderate heat for a minute or two to poach the egg yolks but do not bring the soup to the simmer. Off heat, stir in the enrichment butter a tablespoon at a time. To Serve Cold: Omit final butter enrichment and chill. If too thick, stir in more cream before serving.

Many years ago, someone in the family collected recipes from descendants of my great grandparents, William M. and Florence E. (Snodgrass) Whaley and had them compiled into a cookbook. I am posting those recipes here so that they will not be lost. This recipe was submitted by my Great Aunt Christine Massey

2 c finely chopped spinach or frozen spinach
1/4 c finely chopped onion
4 Tbsp butter or margarine
4 Tbsp flour
2 c chicken broth
2 c half and half
1 tsp salt
14/ tsp nutmeg
dash(es) accent

Steps:

  • 1. Simmer onion in broth 5 minutes.
  • 2. Make roux of butter an flour.
  • 3. Add half and half. Cook 2 minutes.
  • 4. Stir in seasonings and broth.
  • 5. Add spinach to broth; let stand until heated through.
  • 6. Put in blender in small amounts.
  • 7. Serve with grated Provolone cheese, sprinkled over top (optional). "Delicious".
