2 packages (6 ounces each) fresh baby spinach
1 medium apple, chopped
1 cup crumbled feta cheese
1 cup glazed pecans
1/2 cup chopped red onion
1/3 cup dried cranberries
5 bacon strips, cooked and crumbled, optional
DRESSING:
2 tablespoons cider vinegar
1 tablespoon sugar
1/2 teaspoon Dijon mustard
1/8 teaspoon pepper
1/4 cup canola oil

Steps:

  • In a large bowl, combine the first 6 ingredients; stir in bacon if desired., For dressing, in a small bowl, whisk vinegar, sugar, mustard and pepper until blended. Gradually whisk in oil. Pour over salad; toss to coat.

Spinach, apples, red onion & pecans in a sweet-tart dressing. To make this salad extra special, I like to glaze the pecans by stirring them with 1 tablespoon sugar in a medium non-stick frying pan over medium heat, stirring constantly until sugar melts. Pour them out on waxed paper and separate with your spoon while still warm. If you do this, you don't need to toast the pecans. It takes about 5 minutes or so for the sugar to melt.

1 1/2 tablespoons cider vinegar
1 tablespoon prepared mustard (I prefer Dijon)
1 tablespoon sugar
1/2 teaspoon salt

1 golden delicious apple, halved, cored, thinly sliced
1/4 cup red onion, cut in thin strips
3/4 lb fresh spinach, washed, stems removed, leaves torn
1/2 cup toasted pecans

1 Tbl dijon mustard

  • Toss sugar and pecans together in non-stick frying pan. Cook over medium heat, stirring constantly, about 5 minutes, until sugar melts to pecans. Pour nuts on parchment paper in a single layer, making sure separated. Combine olive oil, vinegar, Dijon mustard, sugar, salt, and pepper in a small bowl. Whisk until well combined and thickened. Place dressing in bottom of large salad bowl. Place apple and onion on top of dressing. Then, mound spinach on top of apple, onion, and dressing. Sprinkle pecans over spinach. 1 package triple-washed spinach
3 to 4 handfuls pecan halves
2 tablespoons vegetable oil
A few pinches sugar
A few pinches salt
1/2 cup olive oil
1/4 cup sherry vinegar
2 small shallots, minced
Kosher salt and freshly ground black pepper
1 small wedge Gorgonzola, crumbled (about 2 ounces)

Steps:

  • Preheat oven to 400 degrees F.
  • Place spinach in serving bowl.

1 tablespoon butter
1/2 cup pecan halves
1 tablespoon brown sugar
1 (6 ounce) package fresh Baby Spinach (I also like to make it with a combination of freshbaby spinach and baby greens)
1 large granny smith apple, cored, sliced and then cut each slice into bite-size pieces
1/2 cup crumbled feta cheese
2 tablespoons olive oil
2 tablespoons white vinegar

  • Melt butter in small frying pan over low heat.
  • Add pecans and brown sugar.
  • Cook 2 to 3 minutes, stirring constantly until mixture is caramelized.
  • Spread out on wax paper to cool.
