SPINACH SALAD WITH WARM GORGONZOLA DRESSING

Spinach Salad With Warm Gorgonzola Dressing image

This is a fantastic spinach salad recipe, and one I have made many times for dinner parties. This salad is so good that it can really be served as a main meal, and also compares to the spinach salads that are served at the fancy restaurants, if not BETTER! You can use Roquefort in place of the gorgonzola...once you have tryed this salad you'll be hooked! This is a salad you make often!

BABY GREENS WITH A WARM GORGONZOLA DRESSING

Baby Greens with a Warm Gorgonzola Dressing image

This was the result of an attempt to imitate a salad dressing at a restaurant. I did modify it to include bacon and I serve it warm. The dressing is also fantastic over gnocchi or tortellini.

CHICKEN AND SPINACH SALAD WITH BACON DRESSING

Chicken and Spinach Salad with Bacon Dressing image

Categories     Salad     Chicken     Leafy Green     Onion     Low Carb     Quick & Easy     Lunch     Bacon     Spinach     Fall     Bon Appétit     Sugar Conscious     Paleo     Dairy Free     Wheat/Gluten-Free     Peanut Free     Tree Nut Free     Soy Free     No Sugar Added

Yield Makes 4 servings

Number Of Ingredients 5

3 cups cooked chicken, cut into short strips (from 1 purchased roast chicken)
1 6-ounce bag baby spinach leaves
6 bacon slices, cut into 1/2-inch pieces
1/2 medium-size red onion, sliced paper-thin
3 tablespoons balsamic vinegar

Steps:

  • Place chicken and spinach in large bowl. Cook bacon in large skillet over medium-high heat until crisp. Using slotted spoon, transfer bacon to paper towels. Pour off all but 3 tablespoons drippings from skillet. Add onion and vinegar to drippings in skillet; stir to heat through, scraping up browned bits, about 1 minute. Pour dressing over chicken and spinach. Add bacon; toss to coat (spinach will wilt slightly). Season salad with salt and pepper; serve.

Tips:

  • To save time, use pre-washed spinach or packaged salad mix.
  • For a more intense flavor, use a combination of baby spinach and arugula.
  • If you don't have walnuts, substitute another type of nut, such as pecans or almonds.
  • Use a good quality balsamic vinegar for the dressing. A cheaper vinegar will not taste as good.
  • If you don't have gorgonzola cheese, you can substitute another type of blue cheese, such as Roquefort or Stilton.
  • Serve the salad immediately after dressing it, while the cheese is still warm and melted.

Conclusion:

Spinach salad with warm gorgonzola dressing is a delicious and easy-to-make salad that is perfect for any occasion. It is packed with flavor and nutrients, and it is sure to be a hit with your family and friends. So next time you are looking for a healthy and satisfying salad, give this recipe a try.
