SPINACH AND FETA QUINOA SALAD

Spinach and Feta Quinoa Salad image

All the lovely flavours of spanakopita in a healthful quinoa salad that is pretty easy to make - once you have everything in the pot you can pretty much just sit back and wait for it to finish cooking. The spinach and feta flavour combination works really well in the quinoa salad and the one thing that I like the most, outside of the flavour, is how light and fresh the quinoa salad seems.

Tips:

  • For the best flavor, use fresh, ripe tomatoes. If tomatoes are not in season, you can use canned diced tomatoes, but be sure to drain them well before adding them to the salad.
  • Rinse the quinoa thoroughly before cooking. This will help to remove any saponins, which are bitter compounds that can sometimes be found on quinoa.
  • Cook the quinoa according to the package directions. Once cooked, fluff the quinoa with a fork and let it cool slightly before adding it to the salad.
  • Use a variety of colors of bell peppers to add visual appeal to the salad. Red, yellow, and orange bell peppers are all good choices.
  • If you don't have any fresh herbs on hand, you can use dried herbs instead. Just be sure to use half the amount of dried herbs as you would fresh herbs.
  • Serve the salad immediately or chill it for later. The salad will keep well in the refrigerator for up to 3 days.

Conclusion:

This spinach, tomato, and feta quinoa salad is a delicious and healthy side dish or main course. It's packed with nutrients and flavor, and it's easy to make. With just a few simple ingredients, you can create a dish that is sure to please everyone at your table.
