Time 25m

Yield 4 servings

Number Of Ingredients 13

2 pounds ground beef, 80/20 blend
1/4 cup minced onion
2 tablespoons minced garlic
1 tablespoon salt
1 tablespoon finely ground pepper
2 tablespoons grapeseed oil
1/4 cup brandy
2 cups beef stock or demi-glace
2 cups mushrooms (crimini, button), quartered
1 tablespoon fresh thyme leaves, minced
1/2 tablespoon fresh rosemary leaves, minced
Generous pinch ground nutmeg
3 tablespoons butter, at room temperature

Steps:

  • Preheat the oven to 400 degrees F.
  • In a bowl, blend the ground beef, onions, garlic, salt and pepper and mix well.
  • Next, by hand, portion the meat into 8 to 9 round patties, ensuring they are not more than 1/4-inch tall. Next, heat a large saucepan with the oil over medium-high heat. Add the seasoned patties, allowing to cook on each side until browned, 3 to 4 minutes. After browning both sides, finish in the oven for 4 to 5 minutes for medium-well. Remove from the oven.
  • After baking, remove the patties from the pan and hold on the counter; this will allow the meat to rest. Then, return the pan to medium-high heat for 2 minutes. After the pan is hot again, carefully add the brandy and allow the liquor to cook off. Then add the stock, mushrooms, herbs and nutmeg and cook for 3 to 4 minutes, allowing the sauce to reduce to 1 cup volume. After reducing the sauce, remove the pan from the heat and whisk in the butter to finish the sauce. Serve with the chopped steak.

SKILLET STEAK WITH MUSHROOM SAUCE

Skillet Steak With Mushroom Sauce image

I just made this for the first time last night and what a way to have steak! My DH has diverticulitis and loves steak, not good, but this was a great way for him to get his steak fix with out having an entire steak. Don't be put off by cooking steak in a skillet, it comes out so tender and the sauce compliments it sooo nicely. I used tarragon in place of thyme (all I had) and it came out mouthwatering...literally! I served with Sandi (from CA)'s Herb Infused Red Potatoes and a salad and was surprisingly stuffed! Hope you enjoy!

MUSHROOM STEAK SAUCE

Mushroom Steak Sauce image

We love this recipe for mushroom sauce on our steaks, because it is very generous with the mushrooms. You can also use it on hamburger patties or a roast.

Provided by Bibi

Categories     Sauces

Time 50m

Yield 4

Number Of Ingredients 10

¼ cup unsalted butter
¼ cup chopped onion
1 (12 ounce) package white mushrooms, stemmed and sliced
¼ teaspoon salt, or more to taste
1 teaspoon freshly minced garlic
¾ cup beef stock
¼ cup dry red wine (such as Cabernet Sauvignon)
1 teaspoon Worcestershire sauce
8 sprigs fresh thyme, or to taste
⅛ teaspoon freshly ground black pepper, or more to taste

  • Melt butter in a skillet over medium heat. Add onion and cook until it begins to soften and turn clear, about 4 minutes. Add mushrooms and salt; stir well and cook until mushrooms begin to release their liquid, about 5 minutes. Add garlic and cook until fragrant, about 1 minute.
  • Combine beef stock, wine, and Worcestershire sauce in a small measuring cup. Pour into the skillet and stir in thyme sprigs and pepper; bring to a boil.
  • Reduce heat and simmer, uncovered, until liquid has reduced and sauce is slightly thickened, about 15 minutes. Adjust salt and pepper if necessary.

Tips:

  • Choose the right cut of steak: For this recipe, a tender cut of steak is best, such as a ribeye, strip loin, or filet mignon. Look for a steak that is at least 1 inch thick.
  • Cook the steak to your desired doneness: The cooking time will vary depending on the thickness of the steak and how you like it cooked. For a medium-rare steak, cook for 3-4 minutes per side. For a medium steak, cook for 4-5 minutes per side. For a medium-well steak, cook for 5-6 minutes per side.
  • Make sure the mushrooms are cooked through: The mushrooms should be cooked until they are soft and browned. If they are not cooked through, they will be tough and chewy.
  • Use a good quality red wine: The red wine in this recipe adds a lot of flavor to the sauce. Choose a wine that you would enjoy drinking on its own.
  • Serve the steak with your favorite sides: This recipe is great with mashed potatoes, roasted vegetables, or a simple salad.

Conclusion:

This steak with mushroom sauce recipe is a classic for a reason. It's easy to make, delicious, and sure to impress your guests. With a few simple ingredients, you can create a restaurant-quality meal at home. So next time you're looking for a special dinner recipe, give this one a try. You won't be disappointed.
