½ cup reduced-sodium chicken broth
1 tablespoon balsamic vinegar

Steps:

  • Place each chicken breast half between two pieces of plastic wrap. Using the flat side of a meat mallet, pound chicken lightly to about 1/4 inch thick. Discard plastic wrap. Sprinkle chicken with salt and pepper.
  • In a 12-inch skillet melt 1 tablespoon of the butter over medium-high heat. Reduce heat to medium. Add chicken to skillet. Cook chicken for 6 to 8 minutes or until no longer pink, turning once. Transfer chicken to a platter; cover with foil to keep warm. Turn off burner or remove skillet from heat.

4 skinless chicken breast halves
2 tablespoons olive oil
1 small onion, chopped
1 clove garlic, chopped
10 ounces mushrooms, sliced (you can use any kind you like)
1/2 teaspoon dried oregano
3 tablespoons heavy cream
3/4 cup red wine
1/4 cup chicken stock
salt and pepper

Steps:

  • Pound chicken between plastic wraps with the flat side of mallet.
  • Season with salt and pepper on both sides.
  • Heat oil in a skillet, fry the chicken until they have a nice golden color.
  • You can do this in 2 batches if your skillet is not big enough.
  • Remove chicken from heat, keep warm under a foil wrap.
  • Meanwhile, add chopped onions, garlic and sliced mushroom into the skillet until softened, about 4-6 minutes, depending on how crowded the pan is.
  • Add oregano and wine, cook until the alcohol is cooked out, about 5 minutes.

8 slices bacon, cut crosswise into thin strips
2 tablespoons olive oil
6 quarter chicken pieces (legs and thighs)
1 1/2 teaspoons kosher salt, plus more for chicken
Freshly ground black pepper
1 (1 pound) bag frozen pearl onions, thawed
8 cloves garlic, smashed
1 pound cremini mushrooms, halved
3 russet potatoes, peeled and cut into large rounds (thirds)
3 carrots, peeled and cut into 2-inch pieces
1/3 cup all-purpose flour
4 sprig fresh thyme
2 bay leaves
2 1/2 cups full-bodied red wine
2 cups low-sodium chicken broth
1/2 cup fresh parsley leaves, roughly chopped
3 tablespoons red wine vinegar

Steps:

  • Cook the bacon over medium heat in olive oil in a large Dutch oven until crisp, about 8 minutes. Remove with a slotted spoon and set aside. Season the chicken pieces generously with the salt and pepper and brown the pieces in 2 batches in the bacon drippings. Set aside. Pour off about half of the pan drippings then add the onions, garlic, and mushrooms. Cook over medium-high heat until browned, about 8 minutes. Stir in the potatoes and carrots. 1 1/2 lbs white russet potatoes (the fluffy ones)
5 tablespoons olive oil
1 pinch salt and pepper
2 tablespoons butter
4 garlic cloves
6 skin-on chicken thighs
2 red onions, cut into eighths
8 ounces Brussels sprouts, halved
1 thyme, sprig
1 cup red wine
1/2 cup balsamic vinegar
1 tablespoon honey

Steps:

  • Preheat oven to 425 degrees F. and place a cast iron pan roasting tray in the oven (if you don't have one no problem).
  • Bring a pot of water to a boil add a pinch of salt and add your potatoes. Cook until they are super fluffy... like really soft, but still holds their shape (12-15 minutes). Drain and allow to evaporate for 10 minutes... you want them very dry for super crunch.
  • Remove roasting pan from oven and add 2 Tbsp olive oil, shake the potatoes in a bowl and carefully add them in . Season with salt and pepper and give them a toss, before placing in the oven for 15 minutes.
  • Remove from the oven and add butter along with the garlic and thyme. Give the pan a mix to coat every fluffy potato. Add the potatoes back in the oven when the veggies and chicken go in to cook for a final 10-15 minutes (see step 6).
  • Meanwhile, remove cast iron pan from oven and place on a medium-heat (regular frypan is fine) add drizzle in 2 Tbsp of olive oil. Pat the skin of the chicken dry and season with salt, then place skin-side down in the pan. cook for 5-7 minutes or until skin is super crispy, remove chicken.
  • Add remaining 1 Tbsp of Olive oil to the pan and add your brussels sprouts and onions, cook for 3-4 minutes or until slightly colored. Deglaze with both the red wine and balsamic vinegar and add rosemary & honey. Season with salt and pepper, place chicken on top and pop in the oven to cook for a further 10 minutes.
  • Serve chicken and red wine veggies with the crunchiest potatoes.

1/4 pound lean salt pork
1 cup peeled pearl onions
1/2 pound small whole mushrooms (cut into quarters if large)
2 tablespoons vegetable oil
1 3-pound chicken, cut into serving pieces
Salt and freshly ground pepper to taste
2 tablespoons finely chopped shallots
2 tablespoons finely chopped onions
2 tablespoons finely chopped garlic
2 tablespoons flour
3 cups red wine, like Burgundy or Cotes du Rhone
2 sprigs fresh thyme or 1 teaspoon dried
1 bay leaf
4 sprigs fresh parsley

Steps:

  • Cut the salt pork into small cubes, about 1/3 inch. Place in a skillet with the pearl onions, cover with water and bring to a boil. Cook for about 2 minutes and drain. Return the salt pork and the onions to the skillet, and cook over medium-high heat for 5 minutes until the cubes of lard start to brown. Discard the fat. Add the mushrooms, and cook for 5 minutes longer or until the mushrooms are lightly browned. Set aside.
  • Heat the oil in a heavy casserole or Dutch oven over medium-high heat. Sprinkle the chicken with salt and pepper to taste. Add the chicken pieces, skin side down, and cook until golden on one side, about 4 minutes. Cook on the reverse side about 3 minutes. Drain the fat.
  • Add the shallots, onions and garlic. Cook stirring for about 2 minutes. Add the flour, blend well. Add the wine, and bring to a boil to dissolve the brown particles that cling to the bottom and sides of the casserole. Add the onion, mushroom and pork mixture. Add the thyme, bay leaf and parsley. Check for seasoning, cover, and simmer for 20 to 30 minutes or until tender. Do not overcook. Remove bay leaf and serve with fine noodles.

2 tablespoons Cognac
1 1/2 cups dry red wine
1/2 cup fresh or canned chicken broth

Steps:

  • Sprinkle the chicken with salt and pepper.
