SAUSAGE, DRIED CRANBERRY AND APPLE STUFFING

Sausage, Dried Cranberry and Apple Stuffing image

Serve a hearty side of Food Network's Sausage, Dried Cranberry and Apple Stuffing recipe for Thanksgiving dinner.

Provided by The Hearty Boys

Categories     side-dish

Time 55m

Yield 8 to 10 servings

Number Of Ingredients 14

1 pound mild bulk breakfast sausage
4 tablespoons butter
3 cups sliced leeks, white and pale-green parts only, cleaned well (about 2 large leeks)
2 Granny Smith apples, cored and chopped
1 cup chopped celery with leaves
1 tablespoon poultry seasoning
1 cup dried cranberries, rehydrated in boiling water for 15 minutes and drained
1 tablespoon chopped fresh sage leaves
2 teaspoons chopped fresh rosemary
6 cups boxed bread cubes (croutons)
1/3 cup chopped fresh parsley leaves
2 to 3 cups chicken stock
1 tablespoon salt
2 teaspoons ground black pepper

Steps:

  • Preheat the oven to 375 degrees F.
  • Saute the sausage in a large heavy skillet over medium-high heat until cooked through, crumbling coarsely with the back of a spoon, about 10 minutes. Using a slotted spoon, transfer the sausage and drippings to a large bowl. Melt the butter in the same skillet over medium-high heat. Add the leeks, apples, celery and poultry seasoning to the skillet and saute until the leeks are soft, about 8 minutes. Mix in the drained cranberries, sage and rosemary. Add the mixture to the sausage, then mix in the croutons and parsley. Next add the chicken stock a little at a time until the stuffing is very moist. Be sure not to overdo it; it shouldn't be mushy. Season with salt and pepper. Place in a casserole dish. (The stuffing can be made to this point 2 days before Thanksgiving, refrigerated.)
  • Bake in a 14-inch oval or 9 by 13-inch rectangular casserole dish and place, uncovered, in the oven for 20 to 30 minutes, until the top is crispy and the center piping hot. Remove and serve immediately.

2 medium onions, finely diced
3 cups chopped celery, (about 6 large stalks)
6 cups coarsely chopped leeks, (about 12)
4 apples, peeled, cored and chopped
1 pound breakfast sausage or Italian sausage, casings removed
6 teaspoons poultry seasoning
2 teaspoons chopped fresh rosemary leaves, (about 4 sprigs)

2 cups (1 pint) vegetable stock
Salt and freshly ground black pepper

CRANBERRY APPLE STUFFED PORK LOIN

Cranberry Apple Stuffed Pork Loin image

An easy and impressive dish that tastes wonderful.

Provided by tahoegirl

Categories     Meat and Poultry Recipes     Pork

Time 1h35m

Yield 10

Number Of Ingredients 8

1 cup chicken flavored dry stuffing mix
½ cup water
1 (3 pound) boneless pork loin roast
1 cup chopped apple
⅓ cup dried cranberries
⅓ cup chopped toasted pecans
¼ cup finely chopped onion
salt and black pepper to taste

Steps:

  • Preheat an oven to 325 degrees F (165 degrees C). Combine the stuffing mix and water in a mixing bowl; set aside. Grease a roasting pan with cooking spray.
  • Trim the fat and connective tissue from the pork loin. Cut from one side through the middle horizontally to within 1/2-inch of the other side. Open the two sides and spread them out like an open book. Place the pork loin between two sheets of heavy plastic (resealable freezer bags work well) on a solid, level surface. Firmly pound the pork with the smooth side of a meat mallet to a thickness of 1/2-inch.
  • Stir the apple, cranberries, pecans, and onion into the stuffing mix. Season the pork loin with salt and pepper to taste, then spread the stuffing mix onto the cut side of the loin. Roll the pork into a firm cylinder, and secure with cooking twine. Place into the prepared roasting pan.
  • Bake in the preheated oven until the pork is no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C). Cover the meat with two layers of aluminum foil, and allow to rest in a warm area for 10 minutes. Remove kitchen twine before slicing and serving.

Tips:

  • Mise en Place: Make sure to chop all the vegetables and gather all the ingredients before beginning, as it helps to streamline the cooking process and prevent any scrambling during the cooking stage.
  • Fresh Cranberries: Using fresh cranberries rather than frozen or dried ones imparts a brighter, more intense flavor to the stuffing.
  • Tart Apples: Granny Smith or other tart apples provide a nice balance to the sweetness of the cranberries and add a bit of texture to the stuffing.
  • Savory Herbs: The combination of thyme, sage, and parsley adds a savory, earthy flavor to the stuffing. Feel free to adjust the proportions to suit your taste.
  • Grated Orange Zest: A bit of grated orange zest brightens up the stuffing and adds a citrusy note. Alternatively, you can use lemon zest.
  • Chicken Stock: Using chicken stock instead of water adds more flavor to the stuffing. If using unsalted stock, you may want to add a pinch of salt to taste.
  • Butter: The butter helps to brown the bread cubes and adds a rich flavor to the stuffing. You can use unsalted butter and add salt to taste, or use salted butter as is.
  • Don't Overmix: When combining all the ingredients, mix gently to avoid breaking the bread cubes and turning the stuffing mushy.
  • Stuffing the Bird: If stuffing the turkey or chicken, pack the stuffing loosely into the cavity to allow for expansion during cooking. You can also cook the stuffing separately in a greased casserole dish.
  • Baking: If cooking the stuffing separately, bake it in a preheated oven at 350°F (175°C) for 30-35 minutes, or until golden brown and heated through.

Conclusion:

This classic stove-top cranberry and apple stuffing is a delicious and versatile side dish that complements a variety of holiday meals. With its sweet-tart flavor, aromatic herbs, and tender texture, it's sure to be a hit with your family and friends. Experiment with different bread cubes (such as sourdough or cornbread), herbs, and fruits to create your own unique stuffing recipe. Enjoy!
